    Since being diagnosed with Latent Celiac Disease, I have made it my goal to learn as much as possible about the issues involved. I want to teach others as well as creating simple, yet delicious Gluten, dairy, soy, sugar, corn, and yeast free recipes!

  1. When you cut out gluten for a while, you become more sensitive to it. That's why it didn't necessarily hurt as bad when you used to eat it. I had the same experience recently. It included terrible pain, gas, bloat, diarrhea, rashes, etc. At least it helps you know what has gluten hiding away! :)

  3. It is called cross confusion: Open Original Shared Link Yeast, dairy, and corn are all suspects of this. I have heard this by a couple popular doctors in the Celiac community. Also, I know by how I feel when I eat all 3 that it's true lol
  4. I would try cutting out the dairy and also protein powder isn't necesary. Many of them have a lot of calories. i used to drink protein/fruit smoothies and I gained weight as well. You will get plenty of protein from nuts, meat, vegetables, and quinoa. My protein shakes would add up to 700 calories of just mixed fruit, veggies, greek yogurt, and protein powder...
  5. Among many things, soy is a product that is not good for people avoiding gluten. the protein in soy is so similar to that of gluten that your body reacts the same way with it. Also, soy is not as healthy as people had once thought. It increases the risk for breast cancer and is genetically modified...among many other reasons why we shouldn't eat it. I avoid...
