  1. Burrito sounds great! I'm making stuffed zucchini. Cut in half lengthwise and scooped out. Sauteed green onions and mushrooms in a little olive oil (make your own substitutions). Browned ground turkey all mixed together with avocado. I've also used hummus. Stuff back into hollowed out zucchinis and bake. Maybe 20 minutes - if you bake too long they get...
  2. Hello, Does anyone know if coconut milk is gluten free and ok for casein dairy intolerance? (didn't get tested for lactose) Is it ok for cooking? And does anyone know a coffee creamer that is gluten free, soy free and dairy free? I have no idea what is left I would want to put in my coffee!? <G> I'm having trouble with the acidity and don't...
  3. I had an endoscopy last week, awaiting results. I was told he took one biopsy in esophagus, one in stomach because it was inflamed. And one in intestines. I don't know why he didn't take more. I don't yet know what is causing the stomach inflamation. I am also waiting for blood tests to come back. I'm interested in your results.
  4. I will remember that and thanks. I have read lots of posts of people with setbacks. I'm still exhausted - just woke up from sleeping a couple hours, but the nausea had been gone for 2 days!! Happy dance! I am willing to live on popcorn and water to keep that at bay!!! I know (at least in my head) it will be months, not weeks or days til I feel better...
  5. LMAO - that's funny! And wow, they are expensive. I have been eating a few fresh veggies with hummus, chicken, popcorn, and brown rice. The reason I went in there is I was looking for a fake mayo that was gluten, dairy, and soy free. Anything to replace ranch dressing (soy) for dipping veggies, etc. The other stores didn't carry a soy free version. BTW...
  6. Day 4 1/2 gluten free. Still fairly exhausted, but I feel more alert today. The bestest improvement is I haven't been nauseated in 2 days!!
  7. I can't thank you all enough for the information and inspiration on this website. I haven't been able to get any blood tests done to this point. I printed off information I got from people here. I wouldn't have found these websites without you! From the University of Chicago Celiac Disease Center and NIH and the Wm K. Warren Medical Research Center for...
  8. Does anyone know either a Primary or a GI that specializes in Celiac in Vancouver, WA? Can you give me advice how to find one? Do I need to call every office? GP, or GI? I still need blood work done. I've called a few offices and the person kind of breezes by the answer - oh yeah, doc -fill in the blank- has been a GI for 20+ years. I ask but does he...
  9. Turned out just fine. A little chilly. Had my safe picnic and felt pretty normal!!
  10. I told my best friend via email that I was just diagnosed intolerant to gluten, soy, dairy and eggs. She was very sympathetic and said she had a friend going through the same thing with herself and 3 kids. "She noticed a super change in them a week into the new diet.. So hopefully you have same response..Sugar is in everything, that is how they are able...
  11. 4th gluten free day and I feel pretty good today! Good enough for a car drive... I am out the door to pick up a friend I have been estranged from, to have a picnic and go see several waterfalls near Portland. She the type that will kind of barrel over you trying to help without really listening to what the problem is. Doesn't listen, but her heart is...
  12. Hi everyone and thank you for your responses. Sorry to ask for help and disappear. I had a bad day yesterday. I have 9 pictures of my insides, kind of cool, but none from that area. He did not mention at the time seeing anything. I was just coming out of it, but he said he did a biopsy because of my symptoms. Wait and see I guess. I've decided to to...
  13. Fenrir - Thank so much for info. That's what I thought. Maybe he did see damage then. Man, I hate waiting! Is being ok one minute then a complete emotional meltdown a symptom? Cuz I don't want to play this game anymore!! LOL
  14. Is it possible to get a true positive or negative answer with only 1 biopsy? I called the GI office today to ask exactly what was done during the scope last week. I have the report and I was worried about what I thought the report said. I was out of it and didn't ask any questions at the time. 1 - He found damage to my lower esaphagus and took (one...
  15. From Mamaw "Make sure you take digestive enzymes & probiotics..... to help heal the gut" I just discovered Whole Foods! I am so excited. I went in for a few things and of course got sidetracked. I talked to someone there, not remembering what you recommended and he knew what I was talking about. I got a probiotic L-Glutamine. He said it would...
  16. Hi Kareng. Thanks, I wasn't sure if to post it here, or a new thread. I have stayed with this doc because he is also my FAA medical doctor and has gone out his way to help me when I lost my medical license saving me lots of money in the paperwork process. He is also the one who will be my doc if I can get off the migraine meds, etc and get better and be...
  17. Feeling a little better today. Haven't eaten anything and not so sick to my stomach anymore. whew.
  18. I've read several posts here, and googled and read what I could find. I'm not sure I follow. Most of it talks about DQ2 and DQ8. And I read the post from Ninja, here, about Interpreting your genetic results. I know Enterolabs only test one set. Ninja has a paragraph about the 302 and 202, but it is DQA1, and my results are DQB1. I found this on Wikipedia...
  19. 1desperateladysaved - hi. I guess I used to try a lot of new stuff. I like to cook. (not bake). Don't think there has ever been flour in my house LOL. I loved to stir fry. 5 - 10 veggies at a time, but I always used the bottled sauces, or powder mixes you get in the gravy isle. They all have soy! I don't know how long I can eat plain veggies... I have...
  20. Mamaw, Thanks for responding. I was happy he did the biopsies. No one would do any blood tests. Will I need blood tests to confirm or is biopsy the final answer? I can't use any cooking spray because they are all soy, but thanks. I am realizing how much I rely on soy. When I getting sick to my stomach, I usually have a protein shake. The one's I have...
  21. I introduced myself in another rather long post... but I am new here. I just had a biopsy test for C and am waiting for results. I thought I hadn't stopped gluten yet and went out to breakfast this morning. Kind of a last meal... I can't eat gluten, eggs, soy or dairy anymore. Looking around my kitchen I realize that while not trying because of the testing...
  22. Hello everyone. I've been lurking and reading through your website for weeks. There is such an amazing amount of information here. Thanks for sharing, even if it was unknowingly! I've been trying to figure out all day what to write to introduce myself. I have been searching for answers for 3 or 4 years for health issues (like everyone here it sounds like...
