  1. Well.. My little schedule went by the wayside last week with the new job training and 2 hour commute each way... plus the SURPRISE "i'm Prego!~" news...

    and so it begins!

     

    TONIGHT we will have The Teriyaki Chicken and Warm Ginger Carrot Slaw

     

    I, thankfully, made the teriyaki sauce from coconut aminos last week and it has been happily chilling away until tonight, in the fridge.  PHEW!

     

    OK.. I want Gatorade! :D

  2. Oh  This is not so pretty. haha But thanks!  I just move the dinner leftovers into the lunch category for the next day and do the same as you Laura. If there is extra I save it in the freezer.  Either I am going to need to take it to a long day of work for a meal OR they will collect and eventually there will be a TV dinner (home made edition) happen and that will be great too!!!

     

    Oj, you should see the cleaning schedule I have going. bahahahha They tease me good naturedly about my level of planning but they (at least the boyfriend) also publicly will brag how streamlined and good he has it at home.

     

    I even have time set aside on Sundays for "scheduling & planning"

     

    Oh Zebra!!  I saw you made pickled onions!!!  did they turn out the best thing ever or??? There are a bunch of fun variations to try too~!  I clean out our freezer, fridge, and pantry on the 27th of every month. I remove EVERYTHING from all 3, clean the units/cabinets, then well.. put whatever is left that did not find its way to the trash back in, nice and neatly.  Then I go do the same to all the cabinets that hold dishes/pots&pans/bakeware etc.  I have a slight... cleaning sickness, no? :D Hmm The only food I have ordered online so far is the Tinkyada Giant shells.  I guess I could add a bit more pre made stuff back into my diet now that I am not as sick as I used to be... I will let the thought simmer!

    I have been under the weather and not cooking much lately.  My husband was going to make gluten-free pancakes last night but ended up basically making crepes due to improper measuring... but they were actually good.  LOL 

     

     

    Oh noes!  I hope youre feeling much better by now!  Crepes? mmm filled with strawberries and cream cheese!  oh yeah....  *smacks hands together in glee*

     

     

    Tonight I had a friend over who wanted to see how I planned everything out. She has all the symptoms of pre-diabetes and wants to change her diet.  It was an hours long learning session. It always amazes me how brain washed that people are regarding processed food! They just DO NOT KNOW.  Anyway... I gave her copies of all my menu planning templates and lots of pep talks about different does not have to mean worse ..just different. I hope I gave her a real head start. We have to do different things with our diet, obviously, but planning is the key to success!  Here is one of my plans for next week.  I also shop every day (almost) for fresh veg and all because I make it all from scratch///// and I plan out all the shopping on a similar format. :D Yes.. I like lists. Lists keep me safe! :D

    Tonight we had an Artichoke, Romano, Beef,  and white wine tomato sauce over some roasted Spaghetti Squash and a side of yellow and red cherry tomatoes with fresh basil, Extra virgin Olive Oil and Balsamic. Yumm yumm my tummy is stuffed :D This meal was more to show her that different does not mean worse, different can be delicious! The message got through! :D

    hahah thanks.  It was fun to adapt an old classic. I really like the betty crocker gluten-free cake mix. Its very versatile. Can make carrot cake out of it.. and well..anything else cakey too!

     

    Tonight, I made Jalapeno Popper Soup with Bacon and Cheddar.  It was way too rich so I had to cut it with :o  mashed potato flakes!!!  I AM A SINNER!! bahahaha

  5. Ohhh I made Bunny Cake. The SO is going to visit his parents in Germany for spring break so we did some Eastery type things.  Instead of one whole bunny cake, I baked little 6 inch/13 cm cakes and made 3 small ones! :D  Betty Crocker gluten-free white cake mix and then I made the buttercream frosting to avoid corn syrup, and the jelly beans are from Whole foods and made from Rice Syrup.  WEeeeee! The SO named his Thomas Edison because it was about to be decapitated, the teen named hers Bob the Bunny and said "and now... to eat his butt", and I called mine Jessica Rabbit.. because... yeah  ahahhah

    Tonight I will be making Pasta alla Siciliana with Tinkyada pasta.  OR maybe... some Eggplant Rollatini, instead, with a nice sweet/hot sausage red sauce and pasta on the side...

  6. Went to a dinner meeting of the Washington Society of Professional Engineers last night at a hotel banquet room. I have not eaten out in quite some time so I was nervous. I dont want to have a vomit fit during this! I asked the waiter who asked the chef about ingredients. (No gluten, no grains except rice).  He seemed a bit miffed that he had to check the salad dressing. Ah well... They brought everything out gluten-free for me and it was nice.  I was not brave enough to try the main dish. Mahi mahi had ...flavour on it, and the rice was orange and full of spice and veggies?  and the vegetables were broccoli and squash... I cannot digest broccoli for whatever reason.. so my dinner was. A salad, and a few slices of squash. You may laugh but this is a START!  I was almost brave..but.. ah well.  The rest of the dinner convo was GREAT!  We had a guy from Boeing talk to us about aircraft recovery (vs salvage), and we discussed Big Bertha and the light rail, and oh just a bunch of fun stuff. I really enjoyed it. I do not get out to speak with adults regarding things I like to think about too often! :D :D :D I do not CARE if it was with a bunch of old old men! :D :D

     

    Tonight?  I think I am going to make some Hot Salami Spaghetti  (thank you yet again Tinkyada!  ..or should I go for spaghetti squash to night??)

  7. Today I will make the walking zombies a nice brunch with french toast ( I do not know how this will work with my rice bread but we shall see!), OJ, milk, tea, yogurt, blueberry parfaits, watermelon, bananas, bacon, and sausage, with real maple syrup.

     

    and for dinner tonight I will have the BF grill up the thick cut rib eyes. I will whip up some mushrooms in red wine, and apple horseradish sauce, and The Pioneer Woman's "best macaroni salad ever" (with tinkyada spiral noodles). oh and salad...because.. green stuff :D

    I use nathans hot dogs, they are safe...  hmm I forget the name of the canned chili that is safe, but there IS one.. do the label check dance.  Also..if you can't corn?  No worries..  there are great recipes for grain free corn bread :D

Best of luck!  Both of my kids are off of gluten.  My son tested negative on allergy test but he gets all itchy with rashes if he eats it so it is pretty obvious.  We test him every year and same thing, he eats gluten and gets all itchy.  Sometimes the skin gets affected with food allergies.  My daughter gets Vitiligo patches.  I am pretty sure gluten triggered mine.

     

    Thanks! Its the last night before the blood draw and then we will be able to see her results online as soon as they are out. So we will know sometime this week. I really lov the way they have all the medical stuff open up right to the patient online. I just want to make sure it is NOT celiacs (though I think it very well may be) so that she does not end up in my shoes and sicker than a dog and thinking she is going to die when she is much older.  Its also good to know if it is a food allergy because then the DOCTOR can tell her "THIS IS MAKING YOU SICK, STOP IT!" and it wont be from mom nagging and lecturing. I will be able to smile and nod and tell her it is her own fault. LOL *sighs*

Tonight I am making a beautiful Ratatouille filled with peppers, zucchini, eggplant, mushrooms, and onions and topped with a blend of feta cheese and creme freche and a generous sprinkling of sunflower seeds.  Baked in the oven to a light golden brown on top.. oh mai.... *sighs* One of my friends in Sweden gave me this recipe. It is so tasty!

     

    I am making some polpette (tiny meatballs) to go with and the teen is getting a big serving of angel hair to better gluten her for her panel.

     

    We will finish off with a great lemon sorbet! OH YUM!!!

  11. I can't do Texas.... not even for snow.... :D  They do have easy home school laws there though, so that is nice.  I am glad your hubs got home safe and sound.

     

     

    Tonight We are going to the Burke museum to listen to a lecture about the recovery of soft dinosaur tissue. Awesome!  Then we will order pizza for the gluten eaters so that my daughter can continue her heavy glutening for testing next week.. and me... I have an against the grain pizza crust in the freezer that I will toss sauce/cheese/meat/veggies all over.  Oh yes PIZZA NIGHT!

  12. It is snowing in Texas but here in northern Washington, the cherry trees have blossomed and the daffodils have bloomed.  I am kind of bummed at my first winter here. I WANTED SNOW!  Trade you!  No wait... I can't live in Texas again..sorry hahaha.

     

    I do not feel like cooking tonight. Leftover defrosted pork chops with oranges and parsley... mashed potatoes... and they can eat a salad too.  I apparently do not feel like eating either ... alrighty then.

  13. Sound like an allergy?  But I would still get her tested for Celiac while she is there.

     Yeah, I am having both done.  She also has severe exercise induced asthma, eczema, keratosis pilaris, and the sleep stuff is more of a CFS thing, tummy aches and terrible gas issues.  All of these things I had at her age too... which got progressively worse...and worse...  So we are checking EVERYTHING. Phew. I feel bad she is so miserable though.

    I also soaked those beans and have it all in the crock pot for some "from scratch" baked beans.  OOOoooo I can't wait! :D

     

    The man has requested Chili Bacon Burgers and avocado boats to go with. The teen will no doubt complain. I have to find something to gluten her with too. Her Dr.s appointment for a celiac panel is next Tuesday. Poor thing has been sneezing up a storm and itching and sleeping.. and yet she still refuses to think it may be a gluten or wheat allergy  problem. LOL  OK it is not funny but I have been super glutening the girl and she is currently a train wreck. MORE BREAD BABYCAKES! :ph34r:

  15. Yep, I try and keep the recipes I make on my blog so that anyone can do it.

     

    Tonight I will make Pork Chops with Oranges and Parsley, No Sugar added Applesauce, Green Beans and Butter, and mashed potatoes.  I also have to get the carrot cake all mixed up later for breakfasting..and put the beans in to soak for some crock pot baked beans tomorrow night.. well.. I'd best get to it!

    I have been letting things slide.  SO far this week I have made up a GIANT batch of Colcannon that we ate for 2 days.

     

    Last night I made home made chinese. Hunan Beef with extra vegetables, Fried rice, and a LOT of fried wontons... except made them in spring roll wrappers.  Filled them with cream cheese, sriracha, and green onions, and made a dipping sauce of honey, sriracha, and soy sauce (actually coconut aminos). We all went to bed feeling so full it was almost uncomfortable..no..it WAS uncomfortable LOL

  17. Tonight is home made to order chinese take out night

    The requests are Mongolian Beef, Hunan Beef, and Spicy Garlic Chicken and Snow Peas.  Also a side of cream cheese wontons and fried rice. I couldnt find gluten-free soy sauce so I will be using Braggs Coconut Aminos.

     

    I will be making the gluten free / grain free wontons for the very first time so I hope it goes well!.
