  1. No idea what my folate level is, but I eat a lot of spinach and other high-folate foods without a problem. Apparently folic acid is an artifical, more stable, version of the naturally occuring folate (I'm learning as I go!).
  2. So after a bunch of experimentation, I am 99% sure that I fine with gluten but have a folic acid intolerance. I did a bunch of tests, and everything that has folic acid in it (usually enriched flour), I had terrible problems, but breads without folic acid I can eat all day. Every breakfast cereal makes me throw up, but I just found Trader Joe's puffins (no...
  3. So I'm not celiac, but have severe food intolerances and this board has been extremely helpful in helping me figure out my intolerances. I know for certain that my main culprits are caffeine and dairy. When I stopped those I went from throwing up daily and being nearly bed-ridden to being generally functional with some incidents. I have been doing this (with...
  4. So I'm a few weeks into the elimination diet. Actually going very well; since I cut out everything, I've felt a lot better over time (took about a week) and can clearly identify when a new food causes trouble, and am adding in a new food only very slowly to avoid complications. I have a long list of things I can eat (salmon, steak, chicken, lots of fruits...
  5. So I'm on a full-on elimination and reintroduction diet, tacking everything and looking for correlations. It would be extremely helpful if I had an idea how long symptoms can last after a reaction, and there's a lot of conflicting information on this board and all over the place. I know reactions can take many hours to occur, but could it be days? Weeks?...
  6. So I have been getting slowly better as I've cut out more and more things, and finally decided to go on a full-on elimination diet. Symptoms are much improved, but haven't gone away (I had a migraine this morning and was nauseous all day, for example). I'm being exceedingly careful and only having single ingredient versions of whole foods (fruits, veggies...
  7. That's my hope (and then I'm on the wrong discussion board!) but I keep a food diary and I do seem to have real problems with gluten and oats as well. That said, there's no way to know for sure, since I was on at least some corn through those tests. I agree: I'll just avoid everything for a few months and, if I'm doing well all along, try a very controlled...
  8. Diagnosed as NCGI. Two months gluten free. Felt better, but still horrible. So discussions on this board and reading academic papers suggested that oats, milk, and corn can also be a problem, so I cut those out; felt better, but still horrible. Then I found this site: Open Original Shared Linkwhich lists all the ingredients which are derived from corn, and...
  9. Turns out I'm intolerant to more than just gluten, which is why it's sucked so bad. I've eliminated the additional offenders and am doing better. Here's hoping!
  10. For those of you interested, it turns out I react to corn (and corn syrup and corn starch and so on...) the same way I react to gluten. It took me a while to figure this out, but now that I am off gluten and corn (and dairy, which apparently is a common issue), I am feeling MUCH better. I just wanted to mention this so people who aren't corn-sensitive shouldn...
  11. Gluten free for two months; much better, but still having some unexplained reactions. Food diary suggests corn (had corn on the cob last thursday, was sick all week; popcorn last night, threw it up; had a bunch of jelly bellys (corn starch) and felt not great for a day a few weeks ago). If I have to, I'll go to a full-on paleo diet or elimination diet to...
  12. So last night, five days after my last glutening, I had a bout of vomiting, despite all the other symptoms subsiding; Question 1: Is it possible this is a holdover from last time, or did I get glutened again? I the latter, I think I must have some other sensitivity, since I am being super careful. Are there a few obvious foods I should try cutting out (e...
  13. What's the range for symptoms to appear after a glutening? I've had cases where I feel awful right away, and others where it's not until the next day. Does it go beyond that? This is important, because I've had a case or two where I can't pinpoint the glutening source, so either I'm not looking back far enough, it's something I am unaware of (unlikely, since...
  14. So I've read a ton about how awful it is to get glutened, but the experience is pretty unbelievable. I'm months gluten-free and feeling generally better, but I got glutened Friday (still not sure what it was, so it must have been something small); Saturday was awful: nauseau, lethargy, general discomfort; Sunday was worse: bad mood, generally feeling crappy...
  15. That's fair! I will say that if you catch me taking a bite of birthday cake, you'll catch me throwing up everything I eat for the next week, so I'm in with you guys 100%. :-)
  16. So I have Non-Celiac Glucose Intolerance, but appear to be exceedingly sensitive (can't eat at a table where others are eating bread because crumbs get in, can't reuse pots that cooked gluteny things, etc.) with horrible celiac-like symptoms. When I told people I had NCGI, I got a lot of "Oh, you're one of those self-diagnosed gluten avoiders" and (at first...
  17. I've got a diagnosis of non-celiac gluten intolerance from my GI; my symptoms were horrible and abated with gluten-free, and a one-time gluten challenge (single blind, sine I ate a *lot* of gluten thinking it was gluten-free) led to three days of horirble symptoms. I don't see any ambiguity that gluten is a problem. Biopsy negative for celiac, blood test...
  18. I love that I am now part of a community where using the words "uncontrollable diahreaa" on a message board doesn't raise eyebrows.
  19. I'm going to see the GI today, first time after the endoscopy. He diagnosed me as non-ceilac gluten intolerant. Since then, I have been gluten free, with many ups and downs and me thinking that I have problems with jelly candies (jelly bellys, mike and ike's) or unexplained symptoms (part of recovery?) or maybe it's not gluten. Anything specific I should...
  20. Just thought I'd throw this out there. I'm about four and a half weeks gluten free, but it's been a lot of ups and downs as I get the nag of it; fewer awful terrible bouts of glutening, and not as bad, but still: I get a couple days relief, then something goes wrong and it's two-three days of misery. I've read literally thousands of pages and multiple books...
  21. Yeah, I've seen that. I'm a scientist so I'm experiencing significant dissonance, since my experiences and knowledge directly conflict.
  22. Because that definitely happened to me today. Allergist heard I was intolerant, and wanted to check for allergy. Skin pricks of wheat, barley, rye. No allergic reaction, but definitely feeling crappy. If it's not possible, I have to go look for what caused this.
  23. So I'm still figuring this out. Got glutened this weekend, and I spent hours going back through everything I ate and reconfirming that it was all gluten-free.The only thing I could come up with as a possibility is that I got gluten-free deli at the deli counter, but maybe the slicer had so gluten or something? Is it possible to get enough gluten that way...
  24. Almost four weeks since diagnosis, many slipups, but none in almost two weeks. Today I felt super glutened (feeling poisoned, got the sweats, very nauseous) but not as bad as I have been (vomiting, horrible everything, etc). I was super, super careful lately and went back and just can't think of anything it could have been. So the key question is: is it possible...
  25. So I am clearly having problems when I have Jelly Bellys. I know they're definitely gluten-free, but when I eat them I feel like a small glutening. Anyone else ever have problems like this? Obviously if it makes me feel bad, I'll just avoid them, but I was curious why.
