  1. I suspect gluten may have a half life of a week or more in the body. That has been my experience over the last 15 years. If this hasn't been researched, it should be.
  2. You might want to try Wan Ja Shan Organic Worchestershire Sauce labeled as Gluten-Free. It is brewed in the USA so I believe the label is responsible. Available at good Asian markets and via Amazon.
  3. We have a good Southeast Asian population in the vicinity so gluten-free choices abound. I've used asian rice flour for over 5 years and never experienced any problems. I initially tried US rice flour but the texture was a turn-off.
