  2. the vinegar used in most sushi rice contains gluten. "rice wine vinegar" is a misnomer as it often contains malted barley - it's not just rice or even "glutinous" rice. even on this forum many are confused about this ingredient, it DOES usually contain gluten i eat mostly raw and rarely eat out so it's very easy for me to pinpoint my reactions...
