I say naturopath only because they deal primarily with supplemental supports to expedite healing. I have been quite diligent! Mostly whole foods-fruits/veggies, smoothie form/salad form/soup form. Cauliflower rice, gluten-free rice, gluten-free pasta. I do eat tofu and soy products more often than not (tempeh, soy based vegan cheese) I have had some avocado toast on some gluten-free bread the past few days.

Thank you so much for your thorough response!! I ammmmm assuming that most of these symptoms dissipate once you are farther along on the healing journey? I currently take l-glutamine, multi-vitamins (which contain some thiamine), vitamins C + D (has calcium mixed in with it). But, I am definitely going to look into upping the thiamine to see if... -
