I have been on a gluten free diet for over a month now and for the first time in over 20 years I feel pretty good. I have not been tested but I have some relatives who are gluten intolerant and after closely following my diet I realized that I must be dealing with the same condition as others in my family. It is in fact a huge relief because for the past 5 years I thought that I might have MS because of many symptoms that I have had over the years. I had an MRI and other tests that showed I didn't have MS so I was back at square one. When I finally made the realization that it could all be due to what I was eating I was very excited. I'm feeling almost healthy for the first time in a long time. Creating meals is a bit challenging but something that seems to get easier each week. It certainly forces me to be creative which is good I think. The only thing I miss like crazy are flour tortillas. I'm a quessadilla junkie. I've tried the rice tortillas from the healthfood store and they are horrible. I've tried to make them on my own using different gluten free flours but so far it's been disasterous. I'm also avoiding corn too so can't have those tortillas either. If anyone has any suggestions for substitutes I'd sure love to hear of them. Thanks!
