  1. Yes, this is what we do with our kindergartner and it does seem to work well. Isn't working with third grade son though. Thanks.
  2. I like your way of thinking. Actually, my son doesn't have a problem with everyone eating something different at the same time. If all of the kids brought in different snacks (and even if his was unique) he would be fine. The part that is difficult for him is when 25 people including the teacher are eating goldfish crackers and he is eating cracker jacks...
  3. Hmmm, I never thought of talking to the school nurse. I'm wondering how supportive she would be since I don't have official paperwork from his doctor stating he needs to be on this diet?? Thank you for the suggestion!
  4. My son is in third grade. This is his second year being gluten/casein free. He hasn't had any problems feeling like he doesn't fit in until now. His class eats a late lunch, so the teacher has decided to give them a snack mid morning each day. At the beginning of the year he requested parents send in a box or two of crackers etc. to give out as snacks...
  5. Lorka, Do you have a book with another recipe? Thanks.
  6. Well....I made the recipe given without the gelatin. The texture was decent, but a little runny even after beating for 5 or more minutes. It looked like whip topping, just heavier. The family tasted it and the general consensus was that it needed more experimentation. The coconut flavor was pretty strong and for us was a bit of a distraction from the...
  7. Have you tried looking in the ethnic foods sections? Our wal-mart carries it I believe in the same aisle as the mexican food. I'm getting ready to make mine. Hope it turns out. I will post the results later.
  8. Thanks! I just checked my cans of coconut milk and they don't gave guar gum in them. I'll look for that when I go shopping today.
  9. Thanks for the recipe. I have a question though. You say that you used coconut oil with guar gum in it, but I didn't see coconut oil listed in your recipe? How much did you add? Thanks! If I can't get the gelatin recipe to work, I'll will probably try this one next.
  10. Thank you! Yes , I have been wondering if the gelatin is the problem. I like your suggestions and I will try them. I also wonder if when I let the gelatin sit to cool to room temperature, I let it sit too long? Maybe if it had have been thinner it would have worked better?
  11. I have to make a gluten-free/cf/sf whip topping for our pumpkin pie this year. I found a recipe by Connie Sarros and made it but it didn't form at all! Here is the recipe and what I did. Any ideas on what went wrong? OR does anyone have a different recipe? 1tsp. unflavored gelatin 2 Tbsp. water 3/4 cup very cold coconut milk 1/4 tsp. vanilla...
  12. Sounds delicious! Thanks for posting this. I have to make a gfcfsf pumpkin pie this year also. I was planning on substituting almond milk for the dairy, but I bet coconut would be better!
  13. I like this idea. We had ds's party at our house in Sept. and I made cupcakes with frosting and the kids took one or two bites and left the rest. Sometimes I wonder if it might just be excitement because I know at other gluten parties, kids do the same things. I have wanted to see if I could get a bakery to decorate my cake or cupcakes but haven't found...
  14. I so AGREE! It is exactly the same for me. You are right, it is akin to feeling like you are a kid again! If I had only known about this a long time ago. I have spent the last 8 years feeling like I'm 20 years older than I am. This tops gluten and dairy by a long shot.
  15. Okay, your response seems a little dramatic to me. Uh, I don't buy "MSG," and add it to my foods. That said, it is almost impossible to not get it once in a while as it is in many many foods. If you manage to avoid it 100% of the time, then you must make everything, and I mean just about everything from scratch. Is this the case? If not, do a little...
  16. Mango, Thank you so much for these recipes! I am looking forward to trying them this week.
  17. I need to come up with a gluten/casein free nacho cheese sauce for my kindergarter to have at snack time. The class will be having this and I would like to be able to substitute something for her. I have dabbled before in non-dairy and gluten free cheese things and lets just say they were "yucky." I have found that Tofuttie Brand Better Than Cream...
  18. Test response-----couldn't find this on the board anywhere so I am trying to locate it this way.
  19. Well, I did figure it out finally. It was the soy. Especially soy milk. But I am removing all soy. I saw improvement within 3 days! And not only did I see improvement, but I feel better in other ways also. More energy. Thanks to all who posted with suggestions.
  20. Yes, it is strange how the differenet intolerances affect your body in different ways. I am amazed. And isn't it nice when you realize that you can go off a drug or cream, etc. just by removing something from your diet?
  21. It is clear to me now that soy has been causing my stomach problems. I have stopped eating it and can't believe how much better I am beginning to feel. Besides stomach pain and bloating, I have energy returning! I hadn't associated the low energy with soy. I have already been gluten and casein free for over a year, but now that soy is out of my diet,...
  22. I have tried making casein and gluten free cheese sauce before but they usually turn out yucky. I need to find one for dipping chips in for my daughter at school. I have noticed that Tofutti Better Than Cream Cheese tastes pretty darn close to real cream cheese. So I am wondering if I could use that for the base and then add some other things to make a...
  23. Thanks for posting this! I will definately be checking into these.
  24. Maybe this is why I have always had trouble with supplements. I have always been confused as to why I can't take vitamins, because they say they are dairy and gluten free. But sure enough, any time I take a supplement I feel sick. Do you know of any lines that truly are soy, dairy and gluten free?
  25. As far as I know, soy is usually listed as soy but in different formats: soy lecithin, soybean oil, soy flour, soy milk etc. etc. I don't know of any different names for soy, but others here may.
