Buffalo Chicken Sloppy Joes & Home Made Blue Cheese/ranch Sauce

All the flavour of chicken wings from the local pub around the corner. Topped off with a yummy, creamy "dressing" and carrots and celery on the side for extra dipping. This is just as messy as that Styrofoam container of wings, so get out the napkins! Its a heck of a lot healthier though. For the meat: 3 tbsp butter 2 lb ground chicken breast Salt and Pepper ( I use kosher salt and a pepper grinder) 2 tbsp fresh thyme leaves or 1 tsp dried 5 to 6 ribs celery, 2 to

The Bare Bones

(One of my students learning how to make guacamole) TEACH YOUR CHILDREN TO COOK! Like their life depended on it. It DOES! So I am just going to keep gluten-free and grain free recipes in this blog. I love to cook and since I have a severe and immediate reaction to gluten and corn and I just try and skip soy... I skip the grains. With the exception of rice. All of the things I list that have bread or pasta are made with rice flours. No corn or anything else. You are of course free to substit

1 Week Into Mc Therapy

I am a week into my Entocort steroid therapy for microscopic colitis. I can say that I have no discernible side effects from this drug. It has slowed down my bowel significantly. I am no longer running to the bathroom 8-10x/day. I probably go about half that amount now. The quality of the bowel movements has improved but it varies throughout the day. I have not had significant cramping/pain since starting therapy. That was the most debilitating for me was the cramps. I would be late to work cons

Budesonide For Mc

I saw my GI yesterday. He and I agreed to start me on Entocort EC/Budesonide medication. It is a slow release 3mg capsule that is not dissolved by the stomach pH and instead gets broken down and absorbed in the intestines. It is supposed to have a local effect versus systemic and is considered safer than prednisone. I will be on 9 mg dose once a day for 2 months then we will start to taper the dose down pending my symptoms and then wean off completely. Many have good results with the course of m

Yup... I Have Microscopic Colitis

I just got the message from my doctor that I have microscopic colitis. I had a colonoscopy last month with biopsies. The colonoscopy prep was not nearly as bad as what people have told me it would be. Honestly the best part of my experience was the prep. The scope was not so great - I woke up several times during the procedure - I was only sedated with midazolam, fentanyl and phenagren - and it lasted over an hour whereas it should have been only 20 minutes. Nothing is every EASY or uncomplicate

New Idea

EDIT: Is there a "wrap text" option for the text to eliminate the now-present horizontal scroll of this entry?   Today I was thinking about my back pain during when waking up in the mornings and decided to do some research in the internet. I bumped into diseases like scoliosis, lordosis and kyphosis. I decided to take a look in the mirror and saw that I my back is actually bent, my head hanging far in front of my torso - a clear sign of kyphosis. Now it also struck me that my mother also has s

Dx'd & Getting Re-Tested For Celiac

Hey, everyone!   So, I went to the doctor's yesterday with my loving boyfriend and I got diagnosed with Turner's Syndrome *sigh* My karyotype tested positive much to my dismay   And, also, I tested positive for osteopenia from my dexa scan as well. So, I have to get my bones back into shape so it doesn't progress into fractures and such. Anyone have helpful advice for me? I would appreciate anything!   I have more testing coming up back with my normal clinic, but, it's just double chec

Spaghetti Sauce

Last night I made a pot of spaghetti sauce.   Ingredients: two pounds of ground round beef, one whole red onion, one green pepper, Mccormicks garlic salt, kroger brand oregano, kroger brand basil, salt, pepper, hunts tomatoes, tomato sauce and paste. (Tomato sauce and paste were Hunts)   I felt glutened after eating a bite of the sauce, but from what I've read I wouldn't feel the effects that soon.   I also read that some basil could be cross contaminated.   I was glutened badly 4 days a

Weight Loss Mystery/don't Live By A Grain Silo!

I am going down weight loss mountain the past few months. Things are (as usual) too complicated for me to really know why. My own guess ( just now) is that I finally got the last big allergen out of my diet. . I had previously avoided all sweets except for tiny amounts of honey. Honey was something I had not considered for possible allergies, and finally realized it was the only thing left that I had had often when sick. When I pulled honey out, my weight started dropping. My other theories of t

"just" Gluten Sensitive

Nurse from the GI doctor's office called back and I was negative for celiac disease. Although a little discouraged I know that the month and a half I was off of gluten and how drastically improved I felt that I need to adopt the gluten-free lifestyle. It surely isn't going to hurt me!   I will continue to visit here for ideas and inspiration and to document my journey gluten free as an IBS sufferer (and gluten sensitive individual!).

Don't Forget The Enzymes: Because

I guess many know, but I better be up front to say that I am having allergies most likely from long-term celiac symptoms not diagnosed. At any rate I have healed my villi and had figured that I could stop taking my enzymes. I noticed the following symptoms:   More easily irritated. Overwhelmed Increasing Fatigue , Weight loss 10 lbs in a few months. (This certainly could be something else) Stool containing food fragments and capsule pieces. Well - Now I'm Just Scared, Confused, Angry And Emotional

Last night - was the first time I have cried for that long in years.   ----   I finally got to visit my now official endocrinologist yesterday morning and it has completely left me shaking to my core. I don't want to bore everyone with tiny details so I'm just going to talk about the most important facts - if I don't vent and cope, it's going to eat me. She told me, that my first doctor who ordered my hormone tests should have, is that I basically have no more estrogen in my system. It was

Almost Lab Draw Day-Gluten Challenge

Well only a couple more days until I can get my labs drawn. I go on Saturday morning and cannot wait. I am eager to hear the results and hopefully get to go off this poison in early November for good! I am dreading that I may have to go for an endoscopy and have to stay on gluten even longer though.   I was only off gluten for maybe 2 months before my challenge but the drastic difference I felt taught me that no matter what I do not need gluten in my life no matter what the tests say!   Sin

Cut Out The Extras And Get The Enzymes!

That's exactly right!   Meat, rice and vegies.   The only extras were the ones that I knew and tested before and still feel confident about; Silk coconut milk (for my calcium/magnesium/etc), CeliAct vitamins and my MRM gluten enzymes.   *I added my Rice cheese later, kept up with the Waluby Greek yogurt and drank water from the tap. Then the Rice Dream Organic vanilla ice cream.   There were slip ups of course: #caffeine- I am totally allergic! Symptoms never fail. # not rinsing off my

Pre-Diagnosis, Gluten Challenge 1/2 Way Mark

My story is similar to many where I have been diagnosed with IBS. I got the diagnosis I believe in 2003 by military doctors. I was having weird rash flare ups including bubbles all over fingers and very swollen joints, the rash was ruled as contact dermatitis. My IBS was the combination of C and D. C would never get that bad just was pretty irregular. It has become more and more a common thing for me since then that every time I go my norm is very loose. In fact I knew after having take out or c

Symptoms Of Going Gluten Free And Hidradenitis Suppurativa

Hello all...My name is Shanna AKA Peach and I am new to this site. I wanted to ask about a few things concerning HS (hidradenitis suppurativa) and other symptoms I have experienced during my 1st week of going gluten free. Like many others with HS I have been to multiple doctors, have taken millions of pills and been offered surgery in an attempt to fix my HS. None of which have worked in my 17 years of suffering from this disgusting and debilitating disease. About a year ago I went gluten fr

Gluten Free Since Feb. 2014

I have had stomach problems for as long as I can remember. I was told I had IBS & put on medication which didn't seem to help. I started putting on weight & my belly was really bloated. I was even asked if I was pregnant. I went through some very stressful times from 2009 until 2011. I lost my husband then daughter next my mother n law. I was barely eating, I was so stressed. I noticed I hadn't had any stomach pain during this time. When I did start eating regular again my legs were th

My heart goes out to you!

You're not alone.  I have gone through a similar situation.  Doctors are not well educated about nutrition and rarely connect endometriosis (or any disease) with nutritional deficiencies caused by the malabsorption that occurs with Celiac Disease.

Inflammation and the autoimmune response to gluten damages the villi in the intestines resulting in poor absorption of essential vitamins and minerals that our bodies need for proper functioning.  Correcting nutritional deficiencies is of the utmost importance to recovery.

Deficiency in Thiamine Vitamin B 1 has been shown to be commonly found in women with endometriosis.  Deficiencies in Riboflavin B 2 and Pyridoxine B 6 have also been found, along with low Vitamin C, low Vitamin D, and low Vitamin A.

Do discuss supplementation with essential vitamins and minerals with your dietician and doctor.  A bioactive B Complex,  Vitamins D and A, and minerals like zinc, magnesium and calcium usually need to be supplemented.  Restoring Thiamine levels with Benfotiamine (a form of thiamine that promotes intestinal healing) will help you feel better in a short time.

      Welcome to the tribe!
