Day One
I've never been good with diets. I get going strong for a few weeks, sometimes I've held out for a month or two, but then I fall back and go right back to all the foods I love. So, I've decided to ease into this one. There are still some foods in the house that I bought for me, which I will eat. But it will be so hard to give up some thing food I really adore - like bread, and pasta. And while I know that there are gluten-free forms of these delicious foods, it's still going to be really hard.

Have you noticed it's more expensive to eat healthier than it is to eat badly? On my tight budget, this might be the hardest part.
Luckily, I love Trader Joe's, and have found that they're right around the price range of the "normal foods" in say, Kroger.
And I'm so happy I don't have to give up coffee, or tea, or pop (though, I should give up the pop).
So, last night started the gluten-free diet. My boyfriend is behind me 100%, but I'm not going to be cooking meals strictly gluten-free and make him conform with my diet. No, I'll end up cooking 2 sides and most likely end up sneaking a bite or two of his delicious dinner.
Last night was good though, and simple. I stopped by Trader Joe's on the way home and picked up a few rice bowls for lunches at work, some rice crisps to munch on, and a couple steaks. Dinner was brown rice cooked in chicken broth with veggies cooked in too, and then I pan-seared the steaks and had ceasar salad for a side (no croutons for me, that will be another food item hard to give up!). It was a good dinner, and made the boyfriend think that this might not be so bad.
Yeah, right.
I've been pretty good today, minus the pop tart which contained "enriched wheat flour." Lunch was sausage and an egg with some cheese, and since I was still hungry I had some chicken. But since we're having dinner at my boyfriend's parent's house tonight, I won't be so good, since dinner will be contains-gluten lasagna.
But I'm easing into the diet. It will be too hard to give up all gluten all at once. But steadily, I plan to do it.
