Does anyone know what to do with coconut flour? I heard about it from a friend as a new flour that we can use, but I'm not real sure what to do with it. I would love some help!

Sorry I can't be of help, I guess no one else knows what to do with Coconut Flour either. If you find out, you should let us know. Good luck!

Here is a link to some recipes. I was pretty intrigued - if I find any coconut flour, I'll definitely get some.

Doing a Google search I only found the same ones Stephanie found.

My guess is that it has a natural coconut flavor to it (like unprocessed coconut oil) and would be best used in baked goods that are meant to be sweet. I may be wrong but the only way to find out is to try some. I see it's being promoted as being low carb, but I forgot to check the fats and calories, which are equally important to some of us.

But yes, please post the results anyone, if you try it...we're all curious.

According to the nutrition facts I found, Coconut flour is very high in fat... 58% calories from fat. Or about 12g fat per cup!

In comparison, rice flour is 3% fat which is 2g fat per cup.

Might be best to use in combo with other flours....

Thanks for the help! I have heard that there is a de-fatted version available, which is much lower in fat and high in fiber. If I find out any more info I will let everyone know. I was just so intrigued as it opens up a few more possibilities!

      Thank you this really helped.

Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.

One doctor suggested it, but then seemed irritated when I asked follow-up questions. Oh well—

@GlorietaKaro, your respiratory reactions to gluten make me wonder if there might also be an allergic (anaphylaxis) component at work here.

Thanks to both of you for your responses!  Sadly, even after several years of very strict gluten avoidance, I remember the symptoms well enough that I am too frightened to risk a gluten challenge— heartbeat and breathing problems are scary— Scott, thank you for the specific information— I will call around in the new year to see if I can find anyone. In the meantime, I will carry on has I have been— it’s working! Thanks also for the validation— sometimes I just feel crushed by disbelief. Not enough to make me eat gluten though—
