We recently traveled to Universal Studios and spent three days. Our  10-year-old daughter has celiac and is highly sensitive to cross contamination. We ended up going to the store and loading our mini fridge with breakfast and lunch items that we carried into the park with this. For dinners we had mixed success.  I would recommend eating outside of the park there are many restaurants near Universal Studios that have good reviews on Gluten Free dining and knowledgeable staff. The hotel restaurants were also a very nice option they weren’t as crowded  and the chefs could take time to make sure the food was prepared appropriately. Unfortunately we did not have success  inside the park or on the CityWalk. I think they are just too busy to really accommodate  needs. Many of them have gluten-free offerings but not celiac safe.

Unsure about universal studios, but in the case of Six Flags if you inform them of celiac they let you bring in a cooler of food and your own drinks as a medically required item. They do it for me and just stick the medical sticker on my cooler. Between my Celiac, and corn allergy nothing they serve or offer is safe for me.
