Amazing Chocolate Chip Cookie Recipe

2/3 cup corn starch

1 3/4 cup rice flour (I used brown)

1/2 teaspoon xanthan gum

1 teaspoon salt

1 1/4 teaspoon baking soda

I cup butter flavored shortening (I used 1/4 cup of butter and 3/4 cup of natural applesauce, to cut out some fat)

1 cup granualted sugar

1/4 cup packed brown sudar (light or dark)

2 teaspoons vanilla

2 large eggs ( i used egg beaters)

2 cups/ one 12 oz. package semi sweet chocolate chips

Directions:

Preheat oven to 375

Combine flour, cornstarch, xanthan gum, salt, baking soda in small bowl

Beat shortening, sugars, and vanilla until creamy, add eggs one at a time.

gradually add flour mixture

Stir in chocolate chips

drop by rounded teaspoons on baking sheets

Bake 9-11 minutes or until golden brown, let cool 2 minutes then move to wire rack

yield: about 36 cookies

****My batter came out wet, you could place in the refridgerator but I couldnt wait so I spooned the dough on.

Sounds great but I'll post for the lazy cooks out there. Get Pamela's choc. chip cookie mix (also makes pan bars) and then try really hard not to gorge yourself on them. I bought some for an upcoming family reunion and I'm not sure I can keep away from them for a whole month! They are the best choc. chip cookies I've had in life - gluten or no gluten!

Pamela's mixes are sold at Whole Foods and many health food stores. If not in your area, try www.pamelasproducts.com to see how to get them.

      Thanks for your input.

      If you have hemorrhoids 1x weekly I don't see how you have time to heal from one episode before you experience another one, unless each one is a very minor event. Have you consulted a physician about your hemorrhoid issue? It's not normal to be having an episode every week unless it is really one episode that is not completely healing between weekly flareups.

      No I haven't had one since 2021. I rarely have more than 1 per week.

      Sorry, I see that now as I reread your original post. You say you have hemorrhoids "only once a week" now. When I develop hemorrhoids, which is once every few years now, it generally takes 3-4 days for healing to take place. So, it doesn't seem like you could have much relief time between episodes if you have them weekly. Have you had a lower GI scoping done recently?

      Everyday I eat a medium to large apple in the morning and a large banana at night. I eat a cup of oatmeal in the evening. The ezekiel wheat bread I eat has a good amount of fiber. I haven't dealt with constipation for at least a year. Most of the time my feces are soft.
