1 Week....still Waiting

Well it has already been 1 week since my blood test and I shipped off my DNA to Enterolab. I suppose Kaiser doesn't have their own lab to do Celiac panel's, which is good, 'cause I wouldn't trust them to interpret the results anyway....If I thought they performed and interpreted the tests, I'd forever be suspicious....

That's one week gluten-free, except for the spelt incident and I feel pretty good. Still creaming my coffee with Mylanta, but that and laying off the gluten seems to have made me pretty functional;) Feels weird not to have my stomach churning like a washing machine...

I don't have that afternoon lull where you get sleepy and can hardly stay awake. When my wife drags me to bingo on saturday afternoon, I usually can barely stay awake....I know, I'm 30 years younger than anyone in there, yet I"M the one who can't stay awake! Now unfortunately, I'm wide awake AND I don't have to go to the bathroom. Pretty ironic.

It's 3 and one half days until our cruise...I hope to at least hear something before I go....not that

it will make much difference in my eating habits...and not that I expect to hear anything earth-shattering.

I'm having cravings...cake...cookies...even toast...I want them. Just knowing that I'm not supposed to makes me want them more.

My cravings disappeared after about 2 weeks. THose 2 weeks, all I wanted was a slice--no, a LOAF--of good French bread with butter. And real cookies.

What I ended up doing was munching on Fritos (which I've never craved in my life before)--and they DID calm the cravings. I went through an amazing amount of Fritos in those 2 weeks--and I lost close to 10 pounds ANYWAY. (I needed to lose them and more, so it was a good thing!)

Hang in there--it does get better, really. And I've got tons of great recipes for breads, cakes, and cookies that aren't just acceptable, they are as good as or better than the "real" thing! Really! If you haven't tried Lorka's bread recipe yet, it's amazing.

(sigh) if I had time, I would set up a newbie survivial kit to go alongside Nini's, only mine would include samples of bread, cakes, and cookies, the recipes, and where to purchase the ingredients!!!

      I do not know this, but since they are labelled gluten-free, and are not really a product that could easily be contaminated when making them (there would be not flour in the air of such a facility, for example), I don't really see contamination as something to be concerned about for this type of product.

      Thanks @Scott Adams. Do you know if Kirkland Signature supplements share facility and production lines with other products containing gluten?  I'm worried that I'll react to this brand just like I did with other gluten-free labelled supplement brands.

      This is a really common area of confusion. Most natural cheeses (cheddar, Swiss, mozzarella, Parmesan, brie, camembert, and most blue cheeses) are inherently gluten-free, and you’re right that the molds used today are typically grown on gluten-free media. The bigger risks tend to come from processed cheeses: shredded cheese (anti-caking agents), cheese spreads, beer-washed rinds, smoke-flavored cheeses, and anything with added seasonings or “natural flavors,” where cross-contact can happen. As for yeast, you’re also correct — yeast itself is gluten-free. The issue is the source: brewer’s yeast and yeast extracts can be derived from barley unless labeled gluten-free, while baker’s yeast is generally safe. When in doubt, sticking with whole, unprocessed cheeses and products specifically labeled gluten-free is the safest approach, especially if you’re highly sensitive.
