Cooking From Scratch

Just curious as to how many of you cook from scratch:

A) completely mixing own foods from gluten-free flours

B) cooking from mixes

C) Buy all things premade

If C, where do you buy your products and how expensive are they.

The reason I'm asking is I cook all things from scratch because A) I couldn't find a tasty product at the healthfood store. And B) what I did find on line was expensive.

Hey, this is Pastor Dave's wife. We buy some things premade and make some from scratch! I buy pastas premade because I can't make pasta. (I buy a case at a time to get the discount.) I make any breads, rolls, baked goods type stuff and I even grind most of the grains because the flour is so expensive! We have an Amish food store about 30 min away where I can buy five pounds of tapioca for $3.00 and five pounds of soy for $4.00, etc. So I bought a mill and just run them through! They also have potato starch and rice and buckwheat, and many others for great prices.

Anyway, gluten free stuff doesn't have to be expensive if you have time (but then time can be expensive!) I just think the homemade stuff tastes better.

Wow, Christina, those are some great prices. I went to the Asian market and found potato starch for about 85 cents a pound, that's better than the health food store. I just got a catalogue in the mail today from Bob's Red Mill. There are local distributors, Bob's claims, that I can order in bulk from.

I would buy stuff at the store if I could get it fresh and it tasted good. I would pay a premium for that, but these products don't seem to exist here in Denver anyway.

Oh well, back to the kitchen :)

I make most things from scratch, but not pasta. I'm a self-proclaimed food nazi, and prefer to make food the way I want it made. I did that before going gluten-free as well, though. :-) Works great for me, and no, I don't spend hours a day cooking. :-D

I make most things from scratch - except for pasta, spaghetti sauce (although that will probably change next summer), and my brown rice bread because I have not been happy with my non-yeast breads at home yet...

      I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

      Thanks I am mostly looking for everyday staples and easy meal ideas nothing too specialty if possible.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
