Muffin Cup Biscuits

Muffin Cup Ham and Cheese Biscuits

1/2 stick softened butter

3/4 cup almond milk

1 T. Saco powdered buttermilk, opt.

1 egg

2 T. sugar

1 cup gluten-free flour mix (see below)

3/4 cup cornstarch

2 tsp. xanthan gum

1 1/2 tsp. cream of tartar

3/4 tsp. baking soda

1 tsp. ground flax seed

1/2 tsp. salt

1/2 cup heaping full, tiny diced ham

1/2 cup heaping full, shredded cheddar cheese

In bowl with hand mixer, beat together the butter, milk , powdered buttermilk, egg and sugar. Add remaining dry ingredients and beat until smooth scraping bowl as needed. Only takes a minute ;) . Fold in ham and cheese mixing well with a spatula. Spread evenly into 9 greased muffin cups smoothing the tops with the back of a spoon. Bake in preheated 425 degree oven, for about 15 minutes or until tops start to brown. Serve with a dab of butter.

gluten-free flour mix

3/4 cup sorghum

3/4 cup potato starch or cornstarch

1/2 cup tapioca flour

makes 2 cups

Instead of trying to "reprove" your celiac disease to unwilling ears, consider seeking out a new gastroenterologist or functional medicine doctor, and frame the conversation around managing the complications of a confirmed gluten-free diet for celiac disease. Go in and say, "I have celiac disease, am strictly gluten-free, but I am still suffering from these specific complications: SIBO, chronic fatigue, dermatological issues, and high blood pressure linked to pain. I need a partner to help me address these related conditions." This shifts the focus from a debate about your diagnosis to a collaborative plan for your current suffering, which is the help you truly need and deserve to work toward bouncing back.

      Hello, no I had to have them re done and then used a liner over the top.  Many dentists are not aware of the celiac effects.  Best of luck.   There is other material, yet, very expensive.

      He is not just a psychiatrist.  He is also a neuroscientist.  And yes, I have already read those studies.   I agree with benfotiamine.  This is short term while glutened/inflammation occurs.  As I had already mentioned, these symptoms no longer exist when this phase passes.  And yes, I know that celiac is a disease of malnutrition.  We are working with a naturopath.
