Muffin Cup Biscuits

Muffin Cup Ham and Cheese Biscuits

1/2 stick softened butter

3/4 cup almond milk

1 T. Saco powdered buttermilk, opt.

1 egg

2 T. sugar

1 cup gluten-free flour mix (see below)

3/4 cup cornstarch

2 tsp. xanthan gum

1 1/2 tsp. cream of tartar

3/4 tsp. baking soda

1 tsp. ground flax seed

1/2 tsp. salt

1/2 cup heaping full, tiny diced ham

1/2 cup heaping full, shredded cheddar cheese

In bowl with hand mixer, beat together the butter, milk , powdered buttermilk, egg and sugar. Add remaining dry ingredients and beat until smooth scraping bowl as needed. Only takes a minute ;) . Fold in ham and cheese mixing well with a spatula. Spread evenly into 9 greased muffin cups smoothing the tops with the back of a spoon. Bake in preheated 425 degree oven, for about 15 minutes or until tops start to brown. Serve with a dab of butter.

gluten-free flour mix

3/4 cup sorghum

3/4 cup potato starch or cornstarch

1/2 cup tapioca flour

makes 2 cups

      Thanks for your input.

      If you have hemorrhoids 1x weekly I don't see how you have time to heal from one episode before you experience another one, unless each one is a very minor event. Have you consulted a physician about your hemorrhoid issue? It's not normal to be having an episode every week unless it is really one episode that is not completely healing between weekly flareups.

      No I haven't had one since 2021. I rarely have more than 1 per week.

      Sorry, I see that now as I reread your original post. You say you have hemorrhoids "only once a week" now. When I develop hemorrhoids, which is once every few years now, it generally takes 3-4 days for healing to take place. So, it doesn't seem like you could have much relief time between episodes if you have them weekly. Have you had a lower GI scoping done recently?

      Everyday I eat a medium to large apple in the morning and a large banana at night. I eat a cup of oatmeal in the evening. The ezekiel wheat bread I eat has a good amount of fiber. I haven't dealt with constipation for at least a year. Most of the time my feces are soft.
