Bacon Cheeseburger Upside-down Pizza

I found another one. This original recipe is from Pillsbury, "Casseroles".

(my notes included)

Filling:

1 lb. lean ground beef

1 medium onion, quartered, sliced (or diced)

1 medium bell pepper, any color, cut into bite-sized strips (I used Bird's Eye pepper stir fry with onions)

6 slices bacon, crisply cooked, crumbled

1 14.5 oz. can chunky pizza sauce (I used 2 cups Prego, check label)

2 to 3 Italian plum tomatoes, chopped (I didn't have any)

4 oz.- 6 thin slices, Cheddar cheese (or shredded)

Topping:

2 eggs

1 T. oil

1 cup Pillsbury Best All Purpose flour :angry: (I used Carol's sorghum flour blend + 1/4 tsp. xanthan gum)

1/4 tsp. salt (or onion flavored)

2 slices bacon, crisply cooked, crumbled

Heat oven to 400 degrees .

In large saucepan (frypan) brown ground beef with onion and bell pepper; drain. Stir in 6 slices crumbled bacon and pizza sauce. Spoon into ungreased 13x9", or 3 quart, baking dish. Sprinkle evenly with tomatoes; top with cheese slices (or shredded).

In medium bowl, beat eggs slightly. Add milk and oil; mix well. Lightly spoon flour into measuring cup; level off. Add flour (and xanthan gum) and salt; beat 2 minutes at medium speed. Pour evenly over cheese slices. Sprinkle with 2 slices crumbled bacon.

Bake at 400 degrees for 20-30 minutes (30mins.) or until topping is slightly puffed and deep golden brown.

Comments on this one: I mised the pepperoni, next time I will add some I think. Another veggie could be added like green beans or potatoes with a bit extra sauce too. I sprinkled just a little cheddar on top and some Mrs. Dash. This recipe would be good if you wanted to omit the topping and add some frenchfries instead, with or without cheese. Really good.

My dh loved it 10 times more than the pepperoni recipe and said it would be good with green beans :huh: Must have been the bacon...hm

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?

      Thankyou so much for your words.Its a hard battle when a supposed well known hospital whose celiac " specialist " has down played me because my colon looks fine and put it in my medical and so pcp doesn't take seriously. In their eyes we all carry that gene.Im having alot of bad days trying to be positive because of it.
