I bumped into a paragraph on instant active dry yeast (IADY) scroll to yeast:

we do have numerous dh patients who report minor to moderate reactions...which have used IADYs as the leavening agent...all celiacs should use IADYs with question and caution...omit products using IADYs from the diet of all celiac patients

regular active dry yeast seems to be ok.

Wow. I read the whole thing. Very informative. However, it does go far beyond the scope of simply listing wheat, barley, & rye containing foods. They make many recommendations not strictly based on the actual presence of wheat, barley, & rye. Pretty extreme for a fairly well adjusted Celiac IMO. Of course, such extremism might be needed for those on a gluten-free diet still experiencing serious problems.

Still, there are some errors that would make me question the lists accuracy. Some examples. Blue cheese is not made from bread anymore. Velveeta does not list wheat as an ingredient. Quinoa, amaranth, tef (sp), millet, & buckwheat are listed as foods to avoid.

best regards, lm

Your response on this matter is what I expect. You’ve had a similar episode years ago, but this one is lasting longer!

I'd like to clarify: Is the pain you describe in the area just below your chest constant, or does it only appear when you start moving?
