Pretzels (match Stick)

This original recipe is from "Cooking Free" by Carol Fenster

[my notes]

These are easy to make and oh so tastey!!! You gotta try them!!

PRETZELS

1 T. active dry yeast

1/2 cup sorghum or brown rice flour [i used 1/2 of each]

1/2 cup tapioca flour

2 tsp. xanthan gum

1/2 tsp. salt

1 tsp. onion powder

1 tsp. unflavored gelatin powder [i used pectin]

2/3 cup warm 2 percent milk (cow, rice, or soy) (110 degrees) [i forgot and used cold]

1/2 tsp. sugar or honey

1 T. olive oil [i used light]

1 tsp. vinegar

1 large egg white, beaten to foam*

1 T. coarse salt (opt) [i just sprinkled on a tiny bit about 1/8 tsp.]

1. In medium mixer bowl, blend dry ingredients on low speed [i stirred]. Add milk, sugar, oil, and vinegar. Beat for 3 minutes at high speed. The batter will be soft.

2. Place dough in large, heavy-duty reclosable bag that has a 1/4 inch opening cut diagonally on one corner. Squeeze dough through opening in straight sticks onto greased baking sheet. Hold bag upright to squeeze dough out. Also, hold bag with seam on top, rather than at side. Brush lightly with beaten egg white (or alternative) [easier to just spray]. Place pretzels in warm place to rise 10-15 minutes, or until pretzels reach desired size.

3. Preheat oven to 400 degrees. Sprinkle pretzels with coarse salt (if using) and bake about 15 minutes, until they are dry and golden brown. [or less time for a softer lighter crunch]

*Egg Alternative- Coat pretzels with cooking spray instead of egg wash

New fav recipe

Super easy to make

Sprinkle with garlic salt

Great to drop in your soup

Make blobs and use for croutons

Softer ones taste like mini bread sticks

I want to try dipping them in honey mustard or put in Chex Party Mix or dip in peanut butter or nacho cheese...

Good snack for "kids" of any age

My dd came home from school, loved them and made another batch and she is putting them in her tomato soup. She used garlic salt in the recipe and I sprinkled some on top...mmm

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
