I Made The Best Pumpkin Pie!

I just used the recipe on the label of Libby's pumpkin, but what was so good was my crust! I took a bunch of gluten-free gingersnaps (from Trader Joe's), crushed them in the food processor, mixed them with a little melted butter and pressed them into the pie plate. Baked at 350 for about 10 minutes and let cool before pouring in the pumpkin pie mixture. Bake as usual. It was heavenly. The gingersnap crust really added a nice touch, and it was so easy.

That's what I do for pumpkin pie! I love it. Aren't Trader Joe's the best ginger snaps EVER!!!?

So I have wanted to try it. Is this how?

Make the cookie crust, then bake it for about 10 mins. Cool.

Fill with the Libby's recipe following baking directions on can, 425 for 15 mins, then 350 for 40-50 mins.

On other sites, I read theirs burned.

Do you have to cover the edges? Does the bottom burn? Do you adjust time/temp any?

Any tips would be great. I love gingerbread cookie crust...mmm!

I have been scared to try it and burn the crust.

Much easier than a rolled out pastry too...yes!

So have you made a berry pie this way? I have a bunch of frozen black caps I am going to bake a pie with for New Years. I was planning to use a pastry but what about a vanilla wafer crust...hm?

For Christmas, I made a no-bake pumpkin cheesecake pie with part vanilla wafer and part gingerbread cookie crumbs for the crust. And a blueberry cream cheese pie with vanilla wafer crumb crust. So good and easy!

Yes, you've got it! I didn't pack the crust so high that it went over the lip of the glass pan. When I poured the pumpkin mixture in, I filled it so that it just covered the top of the edges of the crust, because I was a little concerned the edges might burn if they were exposed. Turned out great. I haven't tried a berry pie, but I would like to. Vanilla wafers, mmmm!

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
