For all you Celiacs out there in Denver area who are mourning the loss of being able to eat at your favorite fish & chips place, the Washington Park Whole Foods just started stocking the Starfish brand frozen gluten free battered fish (cod and haddock).

Oh man! Crispy, nice sized pieces of fish -- I'm so happy. Had tried another brand once and the layer of fish inside the breading was almost undetectable. This stuff is good.

Here in WA we have it at Central Market. I bought a box of the Cod as it was the cheapest. When I asked my daughter what she wanted with it, she replied that she wanted chips. Said with a British accent of course.

I wasn't sure how well this meal would go over. Husband was out of town and I don't eat fish. Even though it said a box was 3.5 servings, I made half the box along with a large handful of Alexia frozen fries. That wasn't enough for her!

Last night I made it again. Two boxes of fish. More fries. Served with coleslaw. Had fries leftover. She and husband ate all of the fish and slaw. They love it!

We do our own and batter it with Zatarains. They sell a HUGE container of it at Sam's for around $6.00.

Gluten free, got a bit of a kick to it but we do Cod and Chicken Wings with it, great stuff.

Zatarains what? The only thing I know of is rice. Do they have a seasoning too?

      I’ve used tinctures and made my own edibles with gluten-free ingredients to stay safe. Dispensary staff don’t always know about gluten, so I double-check labels or just make my own.

      It's great to hear that there are some good doctors out there, and this is an example of why having a formal diagnosis can definitely be helpful.

      Update: I have a wonderful new gastroenterologist. She wants to be sure there’s nothing more serious, like refractory celiac, going on. She ordered various tests including some micronutrient tests that no one has ever ordered before.  I’m deficient in folate and zinc and starting supplements for both. I’m so glad I decided to go to a new GI!

      Autoimmune diseases tend to cluster. Many of them are found close together on the chromosomes.

      Just giving another update... I was referred to rheumatology, and they suspect that I may also be dealing with fibromyalgia (it has not been formally diagnosed, but just suggested at this point).  So, I am continuing with the anti-inflammatory diet and vitamins and still working to keep getting rid of all these hidden gluten sources, but I also do have another possible explanation for some of the issues that I'm dealing with.
