Hi, all! I just made a pretty tasty No-Bake Cheesecake and thought I'd share it here as it's one of my few recipes to come out right every time (according to non-celiac gluten eaters :D). Here's the recipe , hope you like :D

Glutenfree, Cornfree, Soyfree, Ricefree No-Bake Cheesecake

For filling:

8 oz cream cheese (I use Horizon Organic which does not contain citric acid, room temperature))

1/4 C white granulated sugar or equivalent sugar substitute

2 - 4 tablespoons lemon juice (by taste)

4 - 6 tablespoons milk (by taste, the less used the sweeter the sugar will be)

1. In a small bowl mix the sugar, lemon juice and milk till it forms a syrup-like paste.

2. Put cream cheese in a larger bowl

3. Add sugar mixture to the cream cheese (with a handmixer on lowest speed), beat on low until a smooth, yet still thick pudding consistancy. Don't overmix or you'll get a fluffy airy whipped topping (like a chiffon) instead.

Pie crust:

1/2 box/bag gluten-free cookies (I use Shabtai Gourmet Ladyfingers)

2 tablespoons shortening (I stick to plain butter here, room temperature)

2 -4 tablespoons milk

4. crush cookies by hand into small chunks

5. add in shortening, mix by hand till it becomes a grainy almost dough-like consistency.

6. add milk a tablespoon at a time until it becomes more dough-like, less grainy.

7. press into an 8" pie pan evenly

8. pour cheese mixture into pie crust

9. top (optional) if you'd like with canned pie filling, preserves, whipped topping, cookie crumbs or any other topping you'd like. If using it untopped I'd suggest doubling the filling recipe for a higher/thicker cheesecake.

10. refrigerate for 2-3 hours.

11. Eat and enjoy :D

Could you be a little more specific on the 1/2 box cookie measurement? There are a variety of sizes of cookie boxes. I'd love to make this for Easter!

My mom has a good chocolate cheesecake recipe. I should find it and convert it. It's really quite good. If only I could remember where I put the recipe....hmmmm....

I use a 4oz box of cookies (ladyfingers) about 5"x7" (20 cookies total, I use 10 for the crust). I've made it with cookies the size of Nana's too (3" diameter sugar cookies too and it only took 6). The Shabtai Gourmet Ladyfingers taste the best but the sugar cookies were good too.

      You should be fine.  You may start feeling better within a few days.  Someone who is very low in thiamine may notice improvement within hours.   Did you get the NeuroMag  or another magnesium supplement?

      Yes Bobs redmill cgf oatmeal I started when I became gluten-free. So taking all 3 with breakfast should work? Will I notice any reactions getting used to these or should I be fine. Thanks

      Hello, @pilber309, welcome to the forum! Are you currently consuming dairy?   You mentioned something about lots of yogurt and cheese, but did you cut it out or are you eating lots of it?   Could you clarify please? Some people with Celiac react to casein, the protein in dairy the same as to gluten with antibodies and villi damage.

      You may want to skip the oatmeal.  I believe you're trialing a gluten free diet while waiting for an appointment with your doctor in the new year and doing a gluten challenge then.  Some people with Celiac disease react to the protein in oats called avenin the same as to gluten.  Cross contamination between oats and gluten containing grains is possible.  Are you consuming certified gluten free oats?   I would hate for you to have a reaction to the oats and blame it on the vitamins. Yes, it will be fine to take them all together.  I take mine all together, B Complex, Benfotiamine and TTFD Thiamine with breakfast. If you're really anxious about it, just take the B Complex and Benfotiamine at breakfast and the Thiamax at lunch.  You won't have to take a second B Complex with the Thiamax.

      So I purchased the Life Extension Benfotiamine with Thiamine along with the Thiamax. I will take along with my Super B Complexes. I stopped taking the multi vitamins. Should I take all 3 vitamins/supplements together with my morning oatmeal breakfast? Do you think I will experience any bad symptoms when taking them.
