Aurelio's Pizza & Pasta

Last night my fiance and another friend wanted to go out. After going through multiple options of places I decided I shouldn't eat at, I discovered online that Aurelio's Pizza offers a gluten-free pizza crust. I had to call and make sure after being disappointed about hearing that Lou Malnati's just put pizza ingredients on top of sausage. Lo and behold Aurelio's is an actual crust.

We got there (the Addison, IL location) and we were served by the owners wife. She explained in full detail about the crust and pasta. It's made in a dedicated kitchen area and is served on cardboard so that it does not touch the re-usable plastic dishes.

I consider myself pretty sensitive now that I haven't had gluten in a few weeks and did not have any problems. My pizza was only $1.00 more and only comes in the 13" (medium) size which was perfect.

With their pasta they can do pretty much any dish on the menu that would not contain gluten in the sauce. I may try that sometime, but I'm already hooked on the pizza! She said right now they do not sell just the crust to make at home, but doesn't mean they wouldn't. They also offer a "not cooked" pizza that you could take home and freeze for those frozen pizza nights.

Just wanted to share my good experience!

Welcome to the forum, @maylynn, I had similar symptoms.  I was anemic, lost a lot of weight, felt full after three bites.  I was deficient in vitamins and minerals, especially Thiamine B1.   Thiamine converts our food to energy so our body can function properly.  While deficient in thiamine, the appetite can disappear (not enough thiamine to digest food) or can become ravenous (the body trying to replete vitamins).   I lost a lot of weight.  In thiamine insufficiency, the body burns fat and muscle, so weight loss.  It takes less thiamine to burn fat and muscle than it takes to burn carbohydrates.   Thiamine is needed to make new blood cells.  Thiamine is needed by red blood cells to carry oxygen.  Thiamine helps with fatigue and anemia.  Malabsorption of Celiac Disease affects all eight water soluble B vitamins, vitamin c, and the four fat soluble vitamins.  Supplementing while healing after diagnosis is beneficial.  Talk to your doctor and nutritionist about supplementing with essential vitamins and minerals.

hmm, I only had a colonoscopy. Would be interesting to have an endoscopy done then I guess.

You said the colonoscopy showed no damage. Did you also have an endoscopy? The upper colon is where celiac damage would be detected via endoscopy, not the colon.

Welcome to the  forum @maylynn! Have you had a follow-up endoscopy/biopsy of the small bowel to check for healing of the villous lining? If not, it's about time one was done. As Scott mentioned, I also wonder if you have food intolerances in addition to gluten. Oats (even gluten free oats), dairy, soy, corn and eggs are some of the most common ones in the celiac community.
