Bad at posting everyday so here is this week so far:

Sun - grilled pork chops marinated in garlic, pepper and Worcestershire sauce, red potatoes in olive oil foil packets, salad

Mon- popped tomato , turkey Ital sausage and arugula pasta

Tue- through rice, chicken, Rotel, and corn in the crockpot

Wed- " impossible cheeseburger pie" & salad with strawberries and Brianna's vinegrette

Thur- left overs after the Lax game

found turkey necks and wings at the market this morning so a huge pot of turkey soup -- doesn't feel much like soup whether -- but it is my Mom's favorite so I'll pack some up for her lunch tomorrow

Giant Oatmeal Granola Cookies.They are a powerhouse of goodness.  I should really post that recipe on here. I pilfered liberally from various recipes out there and changed a few things in it, so I figure it makes it mine. Sort of. 

 

Last night, we had Split Pea and Ham soup ( but I cannot take the credit for it. My friend Sherry Lynn made it at her gluten-free cafe and bakery and it was Deeeee-lishus! as my dear old Dad used to say.

 

Tonight, I'm thinking chicken surprise (cuz I'll be surprised if I work up the enthusiasm to cook it)

 

Back at the gym this week and resuming my efforts to get my muscles in better shape.

I had to refrain from being a tad irked when I hear these young thin chickies at the gym declare "oh, I went gluten-free during the last week to try it and I lost weight and I feel great!"  <_<  good for you.

 

Someday, I figure I'll say "I went gluten-free during the last decade and I feel great"

I found this hysterical. :lol: :lol: My husband may think I'm crazy because I'm always off in my corner laughing.

 

I managed today to roll myself out of bed, get dressed and ready and get dinner in a crock pot all before 1 so I can take off to the doctor. I even managed to apply a blow dryer to my head so I don't look like a mangy animal when I leave the house.

 

Dinner tonight will just be some carrots and onions and celery I threw in the crock pot with a pork roast. Apparently I found out my best friend got tickets to a concert for her birthday next week which is a surprise and she doesn't know  yet, but I'll have to work for her on Thursday. So I'll take a little of that roast and veggies and some of my mac & cheese and freeze them so I don't have to figure out a work lunch at the last minute. I hate figuring out work lunches, and hate taking salads when it isn't summer.

Normal :) -- that is generally me and "usually" sincere.

 

One of my kids had a "vegetarian" over last weekend -- I have nothing about vegies or folks that choose to eat only vegies -- but understand what you are trying to accomplish -- this little b%$@#y one bugs the $#!t out of me on a regular basis - so I make meat that smells mouthwatering on purpose and watch all the other teens at the table make "I'm in heaven sounds" while she eats the lovely colorful salad I always provide - oh ya --- I am evil :lol:

 

Someday, I figure I'll say "I went gluten-free during the last decade and I feel great"

 

Darn tootin' you will and it will not take a decade -- but sure does feel like it some days :wub:

i get really brave, then it's back to the food journal.  maybe strawberries just hate me.  i even made sure they were from california.

 I've been known to get the quizzical look when I guffaw out loud. Karen's one-liners on emails, for example often prompt those.

By the time I explain it,  he's not interested anymore.  I think our humor on here is more of a "you had to be there" kinda thing.

SkiLIsa and I share a common issue of histamine intolerance.

Strawberries are a main culprit as are tomatoes and they can "bug my insides" too.

Maybe that's all it is? Hope so! I know you enjoy your venison (poor Bambi. :(:lol:

Haven't been on in a while -- accidental glutening (evil creamed corn!) & return of horrible dh rash have had me feeling pretty like a bad parent. Hopefully we are on the rebound. Tonight was chicken parmesan with just a little dab of sauce. Crusted the chicken with Glutino garlic & parmesan bagel chip crumbs -- each box has a huge amount of crumbs in the bottom and they make a good 'crust'. It was delish!

LFitts -- don't be too hard on yourself -- I think we have all come up lacking a bit when gluten jumps in our path.  Dinner sounded yummy - glad you are feeling better.

 

Life got in the way of the upside down peach cake today -- so men will have left over choco-mint buttercream frosting on vanilla ice cream -- I'll get the cake in the oven tomorrow -- dessert 5 days straight should get things done around here :P

It's Friday, so chances are pizza is in store for the hubs after his golf outing. I may have encores of last night's "chicken surprise" which 

turned out to be chicken satay with thai peanut sauce and rice noodles.( And Addy, that really surprised me as I had no idea until 5:30 pm what the Sam Hill I was doing with those breasts)  

 

In the early days of this recovery, there was no such thing as culinary spontaneity any more (and that killed me)  but I could not think straight enough (or stand up long enough)  to be so bold. Plus, I could only eat about 5 foods at the time. 

 

Man, it's so good to get so many things back. Even if it's not perfect, life is good.  :)

Well, I guess it is fitting for that to be Irish. Probably playing with her bike streamers. It is good to see more people around here, liven the place up a bit on our down days. :D

 

I have no idea what I am cooking today, I am up earlier than normal because in my brilliance last night I forgot to take my flonase and I woke up stuffy, sore throat and coughing. Tis the season. <_<

So, I know I was just here, but I found this cause someone posted it on facebook. I was thinking this looked good for supper. I may have paraphrased some of the directions, and I also clearly remember that a "box" of macaroni comes in either 8 or 16 ounces and have figured out that works out to 2 or 4 cups of my pasta uncooked. Not sure what size box they want but I can work with this and see what happens. Worst case scenario I have to cook more and waste 15 minutes. I'm having a hard time though convincing my husband that since the recipe said Beef Macaroni, it is clearly not a casserole. Otherwise it would have been called Beef Macaroni Casserole of course.

 

1 box elbow macaroni
1 big can pureed tomatoes
1 can tomato sauce
1 small can tomato paste
4 cups low fat cheese (2 cheddar/2 mozz, but w/e)
1 pound meat
spices to taste

Brown meat
Boil pasta
Heat sauces and paste with spices
Mix everything but cheese
Mix half cheese, stir well

put in large pan
sprinkle rest of cheese
bake 375 for 30-40

I hope i'm not catching a cold. My nose is stuffed, i go from hot to cold, my ears feel icky, and my head hurts some. :unsure:

I've got soup for you both -- it was great and I ate it WITH rice pasta in it -- usually I pull mine outta the pot before I add the pasta group -- and usually I use corn based pasta for soups as it holds up better -- but gotta say it was really great having a serving with pasta -- and had no reactions what so ever -- now just have to take my own advice and not overdo the rice -- man that is tough.

 

Anyway - dropped some off for Mom this morning and will be dropping some off for Dad around noon PST -- head on over for a bowl ;)

hope you all feel better soon!!!  i am making ham & potato soup for sunday's youth luncheon at church, so i will save you some out :)

 

i have no idea what's for dinner - i am in Jersey Girl Heaven stuffing my face with a taylor ham, egg & cheese (WITH S,P,K!!)  - it's on scharr bread, (authentically, it should be on a hard roll) and sliced myself up some orange slices.  going out to shoot pool tonight, so dinner will probably be redbridge hahaha - and i know what everybody thinks of redbridge but here's my favorite part of redbridge beer:  I CAN *GET* IT!  :D  my actual favorite tastiest beer of all time i will never get to drink again:  'knoxville blonde'  brewed in (guess where) a microbrewery.......

 

oh, and i forgot to say:  last week i actually went to:

1.  the mall

2.  out to eat 

3. a. a show

    b. at a bar

 

all on the same night and i didn't feel like i was hit by a bus the next day.  this just keeps getting better and better.  six months ago i would have been not only exhausted and maybe skip the rest of the evening, but probably laid up in the bed the next day.  (except for strawberries.  i am sworn off them!  i have to notice if the smuckers seedless strawberry jam gives me trouble...)

I've questioned things similar to this with my kids. One of them doesn't like mint at all, no kind of mint, not mint teas, not mint chocolate brownies, nothing minty. I asked her if she was maybe switched at birth. :lol: The response of course was "mooooooooooooom!!!!" The other one who found out she is lactose intolerant thought she would die until she discovered cheese doesn't make her lay in bed feeling like she is actually dying. We're a family of cheese-aholics.

      Hello @CC90 Can I just ask a question: have you actually been told that your biopsy were normal, or just that your stomach, duodenum and small intestine looked normal? The reason I ask is that when I had my endoscopy, I was told everything looked normal.  My TTG score was completely through the roof at the time, greater than 100 which was then the cut off max. for my local lab.  Yet when my biopsy results came back, I was told I was stage 3 on the Marsh scale.  I've come across the same thing with at least one other person on this forum who was told everything looked normal, but the report was not talking about the actual biopsy samples, which had to be looked at through a microscope and came back abnormal.

      My bad. I should have reread your first post as for some reason I was thinking your TTG was within normal range. While we are talking about celiac antibody blood work, you might not realize that there is not yet an industry standard rating scale in use for those blood tests so just having a raw number with out the reference scale can be less than helpful, especially when the test results are marginal. But a result of 87.4 is probably out of the normal range and into the positive range for any lab's scale. But back to the question of why your endoscopy/biopsy didn't show damage despite significantly positive TTG. Because they took the trouble to take seven samples, it is not likely they missed damage because of it being patchy. The other possibility is that there hasn't been time for the damage to show up. How long have you been experiencing the symptoms you describe in your first post? Having said all that, there are other medical conditions that can cause elevated TTG-IGA values and sometimes they are transient issues. I think it would be wise to ask for another TTG-IGA before the repeat endoscopy to see if it is still high.  Knitty kitty's suggestion of getting genetic testing done is also something to think about. About 35% of the general population will have one or both genes that are markers for the potential to develop active celiac disease but only about 1% of the population actually develop celiac disease. So, having a celiac potential gene cannot be used to definitively diagnose celiac disease but it can be realistically used to rule it out if you don't have either of the genes. If your symptoms persist, and all testing is complete and the follow-up endoscopy/biopsy still shows no damage, you should consider trialing a gluten free diet for a few months to see if symptoms improve. If not celiac disease, you could have NCGS (Non Celiac Gluten Sensitivity).

      @CC90, Your Lansoprazole is a proton pump inhibitor and has immunosuppressive effects!!!!  This is why your endoscopy didn't show much damage to the intestinal lining!!  The Lansolprazole is suppressing tTg IgA antibodies in the intestines, but those antibodies are getting into the blood stream and causing inflammation and damage in other organs.   Proton pump inhibitors cause intestinal damage in the long run.  If you get off the Lansoprazole for a few months so your immune system is not blocked, then do a gluten challenge, and an endoscopy, THEN they would see intestinal damage. Sheesh!  Doctors can be so ignorant.  I've seen this so many times it's frustrating! Take the B Complex and Benfotiamine.  Get off the Lansoprazole.  Go with the DNA test results.   Welcome to the tribe! P.S. B vitamins are needed to correct anemia!  Not just iron.

      Hi, @kevert93, Those Gluten Assist enzymes digest carbohydrates, not just gluten specifically.  Eating a high carbohydrate meal can deplete Thiamine Vitamin B 1 causing digestive symptoms like you describe.  You could also be having difficulty digesting the oils used in those chips.  Thiamine in the form Benfotiamine can help. We need the eight B vitamins to digest our food, carbs, fats and proteins.  Poor digestion can cause symptoms like vomiting and stomach pain, brain fog, headaches, exhaustion.  Try taking a B Complex with the activated forms of the B vitamins (Life Extension's Bioactive B Complex is great!) and additional Benfotiamine.  The B vitamins are used to make digestive enzymes and will allow your digestive system to function properly.  The B vitamins also will improve headaches, exhaustion, and brain function.  Taking Thiamine in the form Benfotiamine will improve digestive symptoms and lower inflammation, too.  Benfotiamine and the B vitamins are safe.  The B vitamins are chemical compounds found in whole foods, not in highly processed foods like chips.   The body cannot make the B vitamins, so supplementing is beneficial.  Benfotiamine is safe and nontoxic even in high doses.
