Hi Folks:

I have a couple of questions and don't know if I'm posting this in the right forum:

1. I have been taking dandelion as a herbal supplement and recently, when reading about its components, I discovered that gluten is part of its makeup. Now I know that both rice and corn contain gluten but are safe for Celiacs because they do not contain the prolamin proteins that are in wheat, rye, oats, barley, and triticale, however I am wondering whether Dandelion does contain the prolamin proteins or whether it is safe for the Celiac. Anyone know?

2. Since discovering this about dandelion I am wondering whether there are other herbs I need to investigate before taking. I am keen on herbal supplements. Do any of you know of gluten free herb lists?

3. I have also heard that quinoa, buckwheat, teff and other grains that are supposedly safe for Celiacs also contain gluten. Therefore, do any of you know whether the reason they say it is safe is because they are a different set of proteins than the prolamins just like rice and corn?

I realize this is a little in depth for some people, but would appreciate some input from anyone who has done a little research on these topics.

Technically all grains contain gluten. However, there are only certain grains we need to avoid.

Herbal supplements can have gluten in them so you do need to check with each indidvidual manufacturer to make sure that the product is safe before taking it.

Quinoa, millet, and buckwheat are just like corn and rice in the fact that they have different proteins in it that is safe for celiacs.

Yes, I do check out all herbal supplements with the manufacturer before taking them as they do indeed have gluten as an added substance or the supplement has cross contamination potential. However, what I was surprised about was that dandelion has gluten as one of its actual components and so wondered whether anyone knew if the gluten protein in dandelion was on our allowed list or whether it consists of the prolamin proteins that are not allowed.

For this reason I was also asking whether there was anyone who knew it there is such a thing as a list of prohibited herbs for Celiacs as well.

Any more help anyone???

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat. Yes, it can be difficult to get much dietary calcium without dairy. But in many cases, it's not the amount of calcium in the diet that is the problem but the poor uptake of it. And too much calcium supplementation can interfere with the absorption of vitamins and minerals in general because it raises gut pH.
