I know that some people are dairy/casein/milk/whatever intolerant after going gluten-free, but is it always a digestive reaction to it? I drank some milk earlier, and within maybe 10 minutes I started coughing deeply and my nose got stuffy. It passed within about 15 minutes. Steph, The only thing I could think of regarding the pancake is that it was an overload of carbs, plus the amount of sugar in the syrup, so you could have had a worse crash than you did initially. I have hypoglycemic issues as well, and when I went gluten-free I started eating gluten-free cereals and pancakes for breakfast and ended up feeling sooooo...

That's the way mine worked too. I thought that was kind of ridiculous. I still don't know if my visit was covered were not, but I guess I'll find out if/when I get a bill!

I went to see one after I was diagnosed. Originally I was going because my endocrinologist referred me for the hypoglycemic symptoms I was having, and then I just happened to be diagnosed the week before my appt. She didn't help me at all. I do keep a food diary, but I get it pretty much after every meal. I eat pretty plainly and naturally...meat, rice, potatoes, vegetables. I can get it after a meal of chicken or rice, or after a meal of beef stew. And yes, it shows up anywhere between 20 minutes to an hour after eating. -

Hmm, that's kind of scary to hear. I get hypoglycemic symptoms, but I'm not truly hypoglycemic. My meter readings have never been below 75ish, and usually those lowest #'s are when I wake up in the morning or several hours after eating. After a meal it can read anywhere from 85-110. I usually have some sort of meat with rice or potatoes with some vegetables here and there. I'm still at the point where I'm eating a lot of safe foods, and because I have hypoglycemic tendencies and my body sucks up food quickly, when I eat I have to EAT. I can't just snack here and there. I would start out with the blood test. From what I've read here on the boards, though, you can sometimes get a false negative and then have the endoscopy come out positive. I think it depends on how much gluten you're eating at the time and the level of antibodies...I'm not entirely sure though. My brother just got the blood test, and that came out negative...

I did go gluten-free cold turkey. When the nurse called me with my blood test results, all she told me was to try the gluten-free diet. She didn't mention anything about the 2-week detox period...the first 5 days or so were the worst. Now my body is just responding to everything so differently.
