Will search recipes but my weight mgt group came up with a "goldfish cracker" using just processed chesse. Put them on an oiled sheet and they puff and crisp. I made some of the pieces to look like animals...teddy bears mostly. This was to have the protein without the carbs...works for me. -

...but to my Dr. credit she FAXed me a lab order (I work in a small rural hospital). I was able to go to the lab and have the blood drawn and out in 10 minutes (and that included registration...I guess there are a few perks). They send it up to Mayo Clinic so I will know in a couple of days. My symptoms have been kind of hard to describe. Twitch itchy... -
As you read the above replies you might get some answers to your questions. You could have celiac and a sensitivity to wheat (from touching it). But I have known people that use to be able to bake with wheat flour and now cannot. So, it may be a progressive thing...or we are just getting older and nothing works like it use to. good luck Marilyn

It is hard to handle when people are in denial about this. I started a support group a couple of years ago. Lots of the members have siblings and children who will not go get tested because "they cannot live like that". I am going to eat gluten (maybe I just had my last pizza) today and tomorrow and then get in for a blood test. I am sure my M.D. will not want to do it based on the rash so I am going to lie and say I have the typical GI symptoms.
