  1. I have also read about the cheeses being started from breads. I can't pull up the name of the book right this minute though. I am pretty sure it was in "against the grain". However, I too would be interested in knowing a safe cheese. My grandmother had made a cheeseball for the holidays and I didn't feel so great after eating it. -Jessica
  2. I don't know of a link between polyps and Celiac. It might be interesting for someone to research. I personally have diverticulitis. I also wonder if that has something to do with celiac. -Jessica
  3. I substitute taugh last semester, and for my lunches at school. I usually did hillshire farms lunchmeat and cheese rollups. Sometimes used lettuce as a "bread" and made a sandwich. Toon snacks by poore brothers are yummy(like a goldfish cracker but made from potato). Corn chips are good. Lays brand chips are not bad, I have not had problems with...
  4. I made this basic yellow cake recipe this morning and then added to it to make a peach and pineapple upside down cake!! Gluten-Free Yellow Cake Basic and easy, and very versatile.   5. Today is my 1 year anniversary of getting my diagnosis, so just a year today. However, I have been sick FOREVER. When I was a baby I had colic, which I now wonder if it wasn't celiac disease. At age 3 was diagnosed with atopic dermatitis, which is a red flag for celiac disease. In high school had tests done and they said I had duodenitis, another red flag...

  7. Well It is official. Today is my 1 year anniversary of being gluten free. I woke up very excited this morning. I am so happy to be healthy!! I have learned so much from you all. THANK YOU!!! -Jessica
