ARCHIVED Newly Diagnosed
wclemens replied to jillwyckoff's topic in Gluten-Free Foods, Products, Shopping & Medications
jillwyckoff, I'm so glad you are on the road to recovery, and that you've found this site. From your post, I can see that you are such a positive soul, and that you are making the best of a challenging situation. I've had Celiac since I was 8, and I'm 59 now so I've had many of the same challenges of which you write. I believe you will begin to see real... -
ARCHIVED Bad Mood... Really Discouraged.
wclemens replied to Newbie's topic in Coping with Celiac Disease
Newbie, I can certainly identify with what you are saying! I spent so many years sticking to the diet, then feeling better and thinking I could go back to eating "normally." In time I learned how much better I feel when I am as gluten free as possible. I noticed recently after eating in a restaurant, that the next day I was moody and irritable beyond... -
ARCHIVED Are There Any Other Celiacs That Are Overweight?
wclemens replied to Jules's topic in Related Issues & Disorders
Jules, I fit the description you mentioned. I struggled with weight most of my life, even after going gluten, milk, dairy, egg white and yeast free. 8 years ago I discovered The Carbohydrate Addict's Diet, by Drs. Richard and Rachel Heller. I am so blessed. I now stay at 107 and am almost five feet tall. I am 59 years old and can really identify with... -
ARCHIVED Having problems with my diet
wclemens replied to diane's topic in Coping with Celiac Disease
Diane, I am so glad that you are posting on this board. I hope that you are adapting well to the diet. About the high prices--I make most of my food at home, and search for the most inexpensive ingredients, which are still of high quality. I find that if I am mixing any kinds of flours for baking, it helps to make a large quantity at one time, store them... -
ARCHIVED I'm Getting So Frustrated!
wclemens replied to Connie R-E's topic in Parents, Friends and Loved Ones of Celiacs
Connie, my heart goes out to you! I can almost see those children in my mind's eye, and the suffering they are enduring. Sarah's comments should be so helpful, and I agree, there is every reason to boldly approach the subject with your friend. Is there any way to convince the recently-diagnosed Grandma to add her input? She must care about her family... -
ARCHIVED Cornbreads and muffins
wclemens replied to lucycampbell55's topic in Gluten-Free Recipes & Cooking Tips
Lucy, the Easy Muffins sound great, and I'll try them, especially with peanut butter and jam. Thanks so much. Kathy, welcome to the board! Welda -
ARCHIVED I Know What's Wrong Now, When Will I Get Better?
wclemens replied to Lily's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
LisaB, thank you for the explanation of how the adrenaline rush can lead to heart disease. I had never quite looked at it that way before, but the way you put it makes perfect sense. Thanks again. Welda -
ARCHIVED Ezekiel Bread
wclemens replied to oreyes's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi, I tried Ezekiel Bread, and I had a horrible Asthma attack after eating it. My Celiac symptoms usually present as wheezing, choking, and gasping for breath, and believe me, I did all those after eating sprouted wheat. I would say that the results were just the same as ingesting wheat or another grain. Welda -
ARCHIVED Purchase Playdough?
wclemens replied to Terri-Anne's topic in Gluten-Free Foods, Products, Shopping & Medications
I see that Jessie and Miranda have ADHD and Asthma. Just a note--my son was diagnosed ADHD and we've recently tested his new baby and learned the baby has gluten sensitivity and allergies to milk and dairy, as do I (the baby's grandma). I have suffered with Asthma since the age of 8, 51 years now, and learned that not only wheat and all other grains,... -
ARCHIVED Time Between Eating And Symptoms
wclemens replied to cornygirl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sometimes I have reactions of wheezing and being unable to breathe within 15 minutes of a meal, but recently, I had a bad reaction the next morning, and I am still trying to figure out what could have been in the meal that was poisonous for me. I had a strong feeling of irritability, and slight depression, and those are sure signs for me that the restaurant... -
ARCHIVED I'm So Hungry!
wclemens replied to a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Luvtolaff06, it just dawned on me after reading your post, that maybe your system has been so depleted with Celiac that now it is just begging for more food in order to replace all those vitamins, minerals, and nutrients that you were unable to absorb when you were in the "crisis" stage. As a person who always gained weight really easily (five feet tall... -
Don, I can certainly relate to your obsession with having cancer. My father died of colon cancer, and until I had a colonoscopy and had two polyps removed, I feared that I had it too. After the tests showed the polyps benign I went vegan for a year, wanting to avoid any carcinogens in meat, but I was losing weight too fast, so added back protein, and...

ARCHIVED Cornbreads and muffins
wclemens replied to lucycampbell55's topic in Gluten-Free Recipes & Cooking Tips
Lucy, maybe you can make the cornbread anyway. I make cornbread with corn flour and cornmeal, and cornmeal is available at ANY market, so maybe you could combine it with rice flour. My creation calls for: 2 egg yolks (I have allergies to egg whites) 1/2 cup sugar 1/4 cup Imperial Margarine (I'm allergic to butter, milk & dairy) 1 teaspoon vanilla... -
ARCHIVED Going Gluten Free ?
wclemens replied to SteveW's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Steve, it took me a long time after going gluten free to realize that butter, egg whites, and yeast were poison for my system (as well as all milk and dairy). You could go to a meat and vegetable diet for a couple of days, then start adding back foods and see how you react. I've done that, and it is a real eye-opener. Steve, you might want to try Imperial... -
LisaB, Thank you! Welda

Luvtolaff, when we were all on the old board, I remember seeing your screen name and thinking what a wonderful person you must be, to have such a neat name. I've been on this diet since the 1970s, and fell and failed so many times you probably wouldn't even believe that someone could be so--naive. I would lose so much weight and feel so good on this...

ARCHIVED Signs In Baby
wclemens replied to siouxsie's topic in Parents, Friends and Loved Ones of Celiacs
My grandson showed severe reactions to milk at one to two weeks, such as stomach cramping, vomiting his formula, diarrhea, diaper rash, irritability, crying, and general overall distress following ingesting the milk. He was changed to soy and has thrived. I ordered the full spectrum of tests from Enterolab ($368 for the panel), and after we sent a stool... -
Mariann, I am also almost five feet tall and keep my weight around 108 pounds by sticking to a low carb, high protein diet at all times, except for that one hour a day when I can eat or drink anything I am not allergic to (my allergies are wheat and all other grains, all milk and dairy--including butter, chocolate, casein, whey, and maltodextrin. egg whites...

My father died of colon cancer, and so did his brother. My sister, brother, and I have all had colon polyps removed, none cancerous Thank God. I am the only one who has been on a gluten free diet, and I got a lot more serious about being careful to totally stay away from all gluten, milk, dairy, egg whites and yeast, which I am allergic to, after my colonoscopy...

Jeff, I have been gluten free for a long time, but I still experience joint pain and swelling when I eat the nightshade vegetables (potatoes, tomatoes and egg plant bother me), so I have stopped eating them and am doing really well. Welda

It is good to see this board filling up so fast. The old board will be long remembered as an excellent source of information. Linda, I am also allergic to milk and dairy (along with wheat, grains, egg whites and yeast), but I eat sweet things each and every day and seem to thrive. Have you had bad reactions to sugar or other sweeteners? I am on The...

Shirley, I do know what you mean. Maybe it's because I have been dealing with these food allergies for over 50 years and have come across more people than a newly-diagnosed Celiac, but I, too, have had times when I ended up practically in tears after leaving the restaurant and not having someone understand. As I am writing this I am thinking, why in Heaven...

ARCHIVED "help--holiday Horrors" (continued)
wclemens replied to seeking-wholeness's topic in Coping with Celiac Disease
About those holiday meals--Thanksgiving was great because I could eat the turkey, the sweet potatoes, and the green salad, and I took along a couple of pre-fried corn tortillas filled with Ortega chiles to eat in place of the rolls. I almost seemed to fit right in to what everyone else was eating. Christmas Eve I knew in advance that the menu would be... -
ARCHIVED Age At Onset Of Symptoms?
wclemens replied to healthy1's topic in Parents, Friends and Loved Ones of Celiacs
My symptoms started at age 8, and I went to doctors and specialists for years, with no improvement. During my late 20s I tried an elimination diet and found that wheat, grains, milk, dairy, egg whites and yeast made my symptoms worse, but still was hospitalized several times after that, until in my 40s I learned to avoid those TOTALLY. In my 50s I learned... -
ARCHIVED Need Some Hugs
wclemens replied to SofiEmiMom's topic in Parents, Friends and Loved Ones of Celiacs
My heart goes out to you moms who are working so hard to make life enjoyable for your little ones, and putting so much energy into assuring that they will feel good about what is going on. I retired last year after 25 years of elementary teaching, and I was usually the only one who had to have a special menu when treat time or party time came around, so...
