You can also use shredded cauliflower or zucchini in the salad-y recipes that call for bulgar. I am mostly paleo, so I tend to go for the non grain alternatives. -

Basically - until I was gluten free, I was in a complete fog. Spacy, detached - learning issues despite testing with high intelligence, perpetually confused, ditzy. I had trouble holding any but the simplest jobs. Couldn't think my way out of a wet paper bag, and later on, struggled with brittle Graves Disease which impacted my ability to do physical work...

This is interesting because I have Graves Disease. We don't know yet if my GI symptoms were aspects of Graves. I was negative on my Celiac blood tests. But I DID get a rash taht doc thought was DH (which is how celiac was brought up) and I start having recurrence of symptoms when I eat gluten. I just dont have severe GI symptoms now that Graves is under control... -

Starbucks allegedly sells some things that don't have wheat, such as a mozarella caprese salad, but every Starbucks I'm in never carries the wheat-free packaged salads or snacks when I'm there... -
Does anyone here have an issue tolerating corn? I may not even have a clinical issue with corn but for some reason "things don't feel quite right" (it's a very vague thing) if I've been eating a lot of it. I don't feel quite right basing my diet on corn based products... just a vague thing of feeling "off", as opposed to the dramatic effects of being glutened...

My Nutrition teacher (I'm a pre-nursing student and this is a required class) informed me that many Celiacs test negative for a long time before testing positive... she is very well informed about Celiac and I'm just so amazed that my Nutrition instructor knows much more than any doctor I've ever had.... -

Interesting. This was my experience when I went on the Atkins Diet a few years ago - it never occurred to me that the issue was gluten, not carbs even though I occasionally "cheated" and had sushi with sushi rice, with no ill effects. -
