xxnonamexx replied to xxnonamexx's topic in Gluten-Free Recipes & Cooking Tips

But I love using the make your own mixes of gluten-free flours potato starch such as this to make it go further https://theloopywhisk.com/2021/09/23/homemade-gluten-free-flour-blend/ Heres a recipe stating 1:1 https://chefalina.com/gluten... -
Flour 1to1 Mixes never ending lol

That's an idea. I have found good chocolate chip recipes that mimic tates cookies or other chocolate chip cookies with gluten-free for without an issue. I have seen recipes from chef Alina looping whisk etc that have gluten-free flour but they are trial and error. I guess I will have to mix and match. I made my own flour using flax meal corn flour potato... -
I have seen numerous gluten-free flours in stores then 1to1 cup substitute and numerous gluten-free recipes from gluten-free cooking websites that have great recipes but even making my own blend it seems like its not easy to get a fool proof flour substitute for cookies, cakes. I know bread is a bit different but this is more of a science to figure out. I...

1st trip completed LBI in New Jersey. Found gluten-free restaurants and took gluten-free snacks like Snyder pretzels, Tates cookies, Veggie Stix, made my own gluten-free granola and took Silk almond yogurt. Dinner Steak at a gluten-free place, Salad at another place and Burgers from a dedicated gluten-free restaurant. So far so good. I am researching in Aruba...

I have been on this gluten-free journey a few months now and I work in a deli so I'm around gluten all day. I noticed sometimes once a day my eyes tear as if I am peeling onions. I think it is an allergy to gluten. Anything to take for this issue? I heard it might be low vitamin so I started to take a multi vitamin that I found from consumerlabs and started...

Prepping for Testing advice?
xxnonamexx replied to xxnonamexx's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I also read this which some recommended as well: NASPGHAN recommends eating roughly 2 servings of gluten, equivalent to 2 slices of wheat-based bread, daily for 6-8 weeks prior to testing. -
My dr. stated to eat gluten for 4 weeks before bloodtest. I feel so much better w/o gluten and was going to wait until after the summer vacation but hesitating since reading the antibodies might go away etc. and if I can get it over with before hand especially before daughters graduation next month and before summer might be nice. Any tips besides eating...

Baking cooking keeping costs down?
xxnonamexx replied to xxnonamexx's topic in Gluten-Free Recipes & Cooking Tips
I found a diy flour blend 500 g (2 ¾ cups + 2 tbsp) white rice flour (make sure that it's finely ground) 300 g (1 ¾ cups + 1 tbsp) potato starch (note that this is different from potato flour) 200 g (1 ⅓ cups) corn flour (US)/maize flour (UK) I see recipes that say gluten-free flour blend so I guess I can use something like this and... -

Also xanthum gun is that good for you or is there a replacement? There a vegan gluten-free granola bar I purchase locally that I'm trying to replicate I think it's no... -

Thanks dining out is going to be the hardest bc they can claim they handle it gluten-free but do they really? I work in food industry and I can imagine but I have a few places I did take it that are gluten-free without issues so I am slowly finding my go to places. When I go in vacation this summer it will be a task. It going to Aruba might be more difficult... -
What would a diagnosis tell me?

Thanks for the well thought out answer. I was wondering if I needed to take multi vitamins as I'm on elimination diet for the summer until I delve into blood test. It appears 8 weeks before would be 2 months before my blood test. I will see when I schedule. I agree my final gluten farewell I don't want to over indulge either during as I have to work and didn... -
What would a diagnosis tell me?
xxnonamexx replied to xxnonamexx's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My doctor stated 4 slices of whole wheat bread for 4 weeks then take the blood work to diagnose. So I guess this is what I have to look forward to in the fall not to ruin summer plans with my family. I'm still confused on what the diagnose would tell me from the blood work. If it says Im gluten sensitive then I already know that from elimination diet and...
