  2. So what's the deal with casein? I've read that its molecular structure is somewhat similar to that of gluten. How many people on this board are casein intolerant? Also, how common is lectin intolerance? I've read a little about it and am wondering if people who are gluten intolerant may also have varying degrees of lectin intolerances.

  4. I would imagine you'd also have less of an appetite considering the fact that celiac causes malaborption and therefore constant hunger in a lot of people.

    I just throw raw olive oil on top of my already served rice. I eat it like tomato sauce(in moderation of course).
  8. Thank you for your suggestions -- I'll take them into consideration. You're absolutely right about the fact that I don't have to take care of anyone and how that makes life easier. I won't know what it's like until it's my turn to experience it.

    Throw some olive oil in your rice, then. It'll taste great!
  12. Legumes: chick peas(garbanzos), kidney beans, lentils, etc.... They're easy to prepare -- just eat them the way you would rice: whole and boiled along with spices and salt. Be sure to soak them overnight and rinse them well before cooking if you buy them dry. If you have no allergies to legumes(especially lentils), they can become your staple. Vegetables...
  13. Is a salad that hard to make, though? I mean...after all, vegetables are naturally gluten free. So are all tubers, lots of grains and pseudo cereals(quinoa, rice, corn), all legumes, and all meats. I personally don't bake. Most of the food I eat I boil myself. I dunno, I find that my own food tastes better than junk food, but that's me, so I won't impose...

    Does anyone here have rice as their staple? I'm not talking about rice in breads or baked goods. I'm talking about eating plain boiled rice every day the way we(or at least I) used to eat bread. I've noticed that it's not done that much in America and am wondering if that's the reason so many people find it hard to cut wheat products out of their diet...

What matters is the fact that the person gets sick by consuming this substance and the only way to prevent being ill is by NOT consuming it.   19. Easy. Toast some raw white rice, cook it and let it cool. Then you roll it in your hand until it breaks up into tiny balls. I believe this is how couscous is made(but obviously with wheat).
  20. It seems that whenever I get glutened, these hard bumps appear on my head. I'm not 100% sure but I believe it ONLY happens when I've been exposed to some form of gluten. I ususally get 4-6 at a time and take days to go away. Also, they're quite large. I don't think they're pimples. Does this happen to any of you guys?

  23. What kind of reactions do you guys get when you get only slightly glutened? Like, for example, when you accidently eat something that has some gluten based additive.
