  1. Hey..I have ZERO symptoms except for acid reflux which my entire family has and even that is mild. If I can make some good bread...I think I"ll be ok. I gotta have garlic bread with my spaghetti and I LOVE cookies and cakes..whereas DD could care less. When I came home and told Kara that I probably have it..she's like...."it's me and you". :-) I PRAY my...
  2. I just got back from my endoscope. This is what it says: During the procedure we found the following: Scalloping in the third part of the duodenum compatiable with celiac sprue (they took a biopsy) and I won't write the rest but OH MY GOODNESS. I had a negative blood test but he said that basically didn't matter. Has anyone here had a neg blood...
  3. Thank you! Yes, I've gotten the list of gluten-free places to eat at each park. We're taking cereal to eat in our rooms each morning and figure we'd eat lunch in the parks. Then for dinner..we'd leave the park to save money but who knows now. Can you suggest any specific places in Downtown Disney? We're staying in Pop Century and since that's in Animal Kingdom...
  4. Thank you for the info. We LOVE Chik-fil-a but we haven't eaten out at all since we started gluten-free. Of course it's only been 10 days. We had no plans to ever eat in the park. Now that we have to some of the time...do you have to dress up? Are kids meals at the restaurants around 50.00 also? I'm still stressin! Mary
  5. that processes wheat? I'm finding lots of food at Walmart that is gluten-free but has a chance of CC. What is the chances of CC? For example...Great Value Baking Soda, Baking Powder, Seafood Sauce and Black beans...all gluten free but processed in a plant that also processes wheat products. If I eliminate those "possible" products...I am making life SO MUCH...
  6. Kara used to LOVE a jr. cheeseburger and fries from Wendy's. Now she's asking if she can have just a cheeseburger with no bun...and I'm not sure about their fries. I stopped at McDonald's this afternoon and she said they fry their fries and hash browns in the same fryer so that was a big NO. Please let me know ASAP as we had a huge yard sale today and we...
  7. Yes I did and I've glanced at it but haven't had a chance to really sit down and look at everything closely. I've subbed PE for 2 days and lemme tell ya...I am too wiped out to even sit here and concentrate. But on Tuesday, when the kids are back in school, I'm gonna be on here alllllll day writing everything down in my handy-dandy GLUTEN FREE notebook. ...
  8. I'm still in the process of writing everything down. I've been subbing at my kids school everyday so I haven't really had time to sit down and make a plan. I do have a few questions. A lot of you mentions stews...or roast with potatoes and carrots...how do you go about doing that? I'm used to putting it in a crock pot with lipton onion soup mix and a...
  9. how do you do skillet fried sweet potatos? That sounds good.
  10. Oh my goodness ...you all are so helpful so quickly. My spices are Mc Cormicks and some are from Big Lots (sad, eh?) My baking soda is from Walmart and it says..processed in a plant that processes wheat, etc... I guess I'll go to the Health Hut tomorrow and buy some gluten-free flour. I have NONE of the essentials to cook a meal with. No rice flour, no...
  11. Today is only day 5 gluten-free??? It feels like day 20 million. I have NO clue as to what to fix for dinner without making two entirely different meals! Once again, I made Kara a corn tortilla pizza. Pretty soon she'll turn into one...complete with pepperoni's for eyes. I'm at a total loss of what to fix that she would like. She has plenty of snacks...but...
  12. Thank you all so much for the good advice. As long as Kara can have Aunt Jemima lite..she'll be happpy. As sad as it is...that's what she's grown up having so she should like it on the Vann's waffles. My husband, however, wants the real maple syrup for himself. DH is out right now buying Trix and more Dora cereal...not to mention lots more Trix yogurt...
  13. He said there are no if's, and's or buts, about it...in all capital letters she is a CELIAC! Now I'm praying she's not lactose intolerent, also. If she can't have cheese....oh....I cant' even IMAGINE it. He said the results have to be sent to Delaware and I'll find that out soon. Until then...does anyone here use Aunt Jemima Lite syrup? My DH is going...
  14. I bought mine at Super Walmart..on sale for 1.50 a box. Now that I know they're gluten-free I'm sending DH out to buy about 5 boxes!
  15. I'm sorry to bombard this site with so many questions...and probably questions that have been asked over and over so SORRY if that's so. I'm sure I'll get most of my questions answered when we meet with the nutritionilist...but until then.....here are the ingredients of the cereal.... Whole Grain Corn, Corn Meal, Sugar, Corn Bran, Modified Corn Starch...
  16. We're going in early May to Disney World and if I weren't stressed enough...DD's blood work came back positive for Celiac. Now awaiting results from biopsy but have started gluten-free...today is day 3 and she cried before going to school (she's 9) b/c she wanted to eat lunch there. Oh, the long road ahead of us. Anyway...I'd like to eat outside of the...
  17. I am so new to this, too. Today is Kara's 3rd day gluten-free. Her first school day. She woke up not wanting to go to school...then when I had to read the lunch menu to my 6 yr old...she bursts out crying. Oh how I wanted to cry with her. I packed her a good lunch...but let's face it...it's not the pizza they're having today at school. My stomach is in knots...
  18. My 9 yr old DD went from 60lbs to a steady 54 and hasnt' gained weight in months. This was the only sign of something wrong. She pretty much stopped eating a few months ago b/c she said she always felt like she was going to throw up..which she never did. She was diagnosed with acid reflux late August. She's been on Prilosec since then and when I took her...
  19. You are so lucky to have a meeting like that for your child to meet other Celiac kids. If your child wants an email friend...let me know. My DD is 9. Today is her 2nd day of gluten free. She had her biopsy on Friday and it will be 7 -9 days before we get the results back. Of course I couldnt' wait any longer to start her on this diet b/c she's lost so much...
  20. Thank you all so much. I've found some pretty easy gluten-free receipes that sound like my DD will eat them. Her favorite foods in the whole world are anything Italian and Mexican. So of course I cried and cried thinking about all of her favorite foods going "bye bye". However, my biggest fear is breakfast. Cereal is a staple in her diet. And from what...
  21. Hello all, I'm new here and definitely need some support b/c I am starting to feel overwhelmed. My daughter, Kara, quit gaining weight and so her Dr. had her tested for Celiac. It was VERY postive and now on Friday is her biopsy. I am not waiting for the positive result before I start the gluten free diet b/c she is SO skinny and needs to put on some...
