  1. I love the flavor of the Pamela's mix, and am finding that buying it in bulk from Lame Advertisement is my most affordable way to get gluten-free bread. I, too, have had several loaves turn out lopsided, where one side of the pan rose faster and higher than the other. Those loaves were too brown, too. Those happened when I followed the package directions...
  2. Thanks for the link! Gosh, I haven't had cheese in around a decade. I'd love to try the Rice Vegan cheese. I just e-mailed my local health food store to see if they will special order it.
  3. That looks yummy! Is there a dairy-free, soy-free cheese? What brand did you use? Thanks for sharing the recipe!
  4. I love the Gluten-Free Gourmet Makes Dessert, by Bette Hagman. I've had such good look with the cookie recipes in it.
  5. Thanks for all of the tips! Last night I used the Pamela's bread mix to make rolls. They were wonderful! I couldn't believe how nice the texture was, and how easy the recipe was. I was pleasantly surprised. I didn't know if I'd like the sorghum flour that's in the mix, but I thought it tasted good. My husband, who can eat anything, liked the rolls a lot....
  6. I just bought Pamela's bread mix for the first time, and am excited to have found a gluten-free, df, sf bread mix. There are so many recipes on the bag. I was wondering which one others like best. I'm trying to decide what to make first. (I won't be making the cheese bread, since I cook without dairy and soy) Thanks for your feedback!
  7. I have made Bette Hagman's spritz cookies (found in The Gluten Free Gourmet Makes Dessert) with a cookie gun and they came out great. I'm not sure if the dough (which was gluten-free, casein-free, and soy-free) was different from regular spritz cookie dough (I hadn't made spritz cookies in years, and have been gluten-free for a long time). It took some trial...
  8. I had good luck with Bette Hagman's recipe for spritz cookies, found on pg 174 of The Gluten Free Gourmet Makes Dessert. My husband, who loves anything rich and buttery, really liked the cookies. Bette Hagman's recipe calls for her 4-flour bean mix and sweet rice flour. So, you might be able to adapt your original spritz cookie recipe using similar...
  9. Lately when I want cocoa, I heat up a mug of chocolate Rice Dream and mix in about a tablespoon of coconut milk (it makes it more creamy). Last winter I found a peppermint cocoa at Trader Joe's and would make it with half rice milk and half coconut milk. Yum!
  10. One thing that's worked very well for me is to make gluten-free, dairy-free, soy-free pumpkin pie for Thanksgiving. For the pie crust I use Bette Hagman's recipe for Donna Jo's Dream Pastry. I use Spectrum Palm Oil Shortening in the crust instead of using butter or margarine, so as to avoid dairy and soy. Then, I follow the basic pumpkin pie recipe on a can...
