ARCHIVED Feeling Great: So How Do I Continue To Stay gluten-free?
Molecular Dude replied to Molecular Dude's topic in Coping with Celiac Disease
Thank you all so much for your responses. Yes, the correct and rational path is to ALWAYS remain gluten free, and recalling/realizing the terrible effects of gluten on your body and mind is the best way to overcome the temptation of savoring and devouring your old favorite foods. Besides, I'm certain that I will suffer through cross-contamination somewhere... -
ARCHIVED Feeling Great: So How Do I Continue To Stay gluten-free?
Molecular Dude posted a topic in Coping with Celiac Disease
Hello All, I haven't posted recently because I've been essentially symptom-free for about 2 months now, which is absolutely amazing and I wish that everyone could feel as well! The problem is that I'm starting to get this feeling of invincibility. For more than 5 years the slightest hint of gluten would make me ill. Now, I'm still very careful and... -

ARCHIVED How Long Until You Would Believe It?
Molecular Dude posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hello All, In a recent study (Eur J Gastroenterol Hepatol. 2008 May;20(5):423-429), it was reported that some individuals with >10-yr biopsy-proven celiac disease experienced spontaneous gluten tolerance and a complete return to normalcy. It is extremely interesting that this is possible although the mechanism is entirely unknown. I'm just wondering... -
ARCHIVED Why Are There Rare, But Occasiona,l Periods Of Symptom Remission?
Molecular Dude posted a topic in Coping with Celiac Disease
Hi everyone, I do the very best that I can to avoid gluten-containing foods, but I live in a gluten-filled household, and we still eat in restaurants about once every two weeks. I also seem to have a spectrum of additional food sensitivities that I have never completely nailed down. As a result, it is quite common for me to experience digestive system... -
ARCHIVED Does This Ever Become "instinct"?
Molecular Dude replied to Molecular Dude's topic in Coping with Celiac Disease
Glad to hear that, eventually, this will likely become second nature to me. I think that I probably would have already attained that state, but I live in a gluten-filled household and that definitely complicates matters. Actually, the most troublesome part is that family and friends are always bringing up the issue, so I always find myself discussing... -
ARCHIVED Does This Ever Become "instinct"?
Molecular Dude posted a topic in Coping with Celiac Disease
After 4 years of being gluten free I find that I still "think" about being gluten free. I don't think about whether it's OK to drink water. I also don't think about self-preservation, or avoiding accidents, or a million other things that are just intinctual. But, even in my own house, I still think about avoiding gluten. Does this ever end, or does it go... -
I find that whenever I attend anything involving food, my dietary requirements quickly become the center of conversation. This is the case even when I don't bring it up because someone else will mention it, and it just takes off from there. Sometimes I wish that everyone would just give it a rest, forget about it, and just let me deal with it on my own...

ARCHIVED Grain Discomfort
Molecular Dude replied to PaulaHayden's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm like you! I love Chebe breads, but they have virtually the same effect on me as regular wheat bread products! The same with all gluten-free products that have tapioca as a major ingredient -- go figure. -
ARCHIVED How Long To Feel The Effects Of Gluten Exposure?
Molecular Dude posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
For those of you that have been gluten free for some time: How long does it usually take for you to feel the effects of gluten exposure? For me it's generally 3-5 days -
ARCHIVED Glutened But No Symptoms
Molecular Dude replied to ginghamkim's topic in Coping with Celiac Disease
Hopefully, you're "out of the woods," but it's sometimes taken up to a week for me to experience significant digestive effects from known gluten exposure. In fact, the usual time for me is 3-5 days. -
ARCHIVED Would You Be Among The First To Give It A Try?
Molecular Dude replied to Molecular Dude's topic in Coping with Celiac Disease
For those of you that are saying "No", I certainly understand your views. There is always risk with drug trials, and with medications even after they have been approved by the FDA. But, remember this is a HYPOTHETICAL secondary trial (I mentioned AT-1001 only as an example to start this thread). I probably wouldn't participate in a Phase I study either... -
ARCHIVED Would You Be Among The First To Give It A Try?
Molecular Dude posted a topic in Coping with Celiac Disease
This is hypothetical. What if an experimental treatment for gluten sensitivity (ex. AT-1001, the zonulin inhibitor) proved to be very effective in preliminary trials, but little or nothing was known about possible side effects or long term effects. Would you be willing to participate in the secondary trials? I think that I would because I really hate... -
Hi Everyone, My wife and I would like to catch a new movie this weekend (or soon). We like comedies, and are thinking of seeing "The Bucket List". Comments/Suggestions?

ARCHIVED Frustrated About Friends And Restaurants
Molecular Dude posted a topic in Coping with Celiac Disease
I'm so frustrated!! We have some very good friends with whom we often go to restaurants together. They are well aware of my dietary needs and have no problem coping with how I have to deal with restaurant menus, staff, etc. Last week we went to a tapas-style place where we ordered multiple dishes and passed them around. We were careful to avoid all of... -
ARCHIVED Stomache Discomfort / Gas
Molecular Dude replied to Bibulousman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi, It's been 4 years since I started my gluten-free diet and, as a result, I feel pretty well most of the time. Despite this, and despite my being a scientist by vocation, I have yet to 100% identify all of the foods (or food ingedients) that irritate my digestive system. People with gluten-sensitivity tend to have allergies or sensitivities to other... -
ARCHIVED Has Anyone Tried The New gluten-free Bakery In Pittsburgh?
Molecular Dude posted a topic in Gluten-Free Restaurants
I understand that there is a new gluten-free bakery, called Gluuteny, in the Squirrel Hill section of Pittsburgh, PA. Has anyone tried it? if so, how was it? I used to live in that area and will likely be going back to visit sometime soon. I'm hoping that this bakery is something to look forward to. Thanks -
ARCHIVED How Common Is Self-diagnosis?
Molecular Dude replied to Molecular Dude's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My situation is identical to yours. I respond very negatively to gluten, but do not have a "real" diagnosis. So, I just tell people that I have celiac, or something very similar, and go from there. When they ask why I don't know for sure, I'll go through the whole explanation, if time permits. Otherwise, I'll just tell them that the tests are often inconclusive... -
ARCHIVED Related Food Intolerances?
Molecular Dude replied to Maureen73's topic in Food Intolerance & Leaky Gut
Before I realized that my primary issue was gluten-intolerance, I found that I had very similar symptoms whenever I would eat nectarines, peaches or pears. In fact, I tried eliminating these specific fruits prior to eliminating gluten, but the gluten issue was more dominant, so I didn't really notice much of a difference. Now that I have been gluten-free... -
ARCHIVED How Common Is Self-diagnosis?
Molecular Dude posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Greetings to all, I've been gluten-free for about 4 years now, but have never had a formally confirmed diagnosis of celiac or gluten-sensitivity. My wife and I just figured it out on our own back then, and after I started to feel better, I found that every time I "cheated", I paid the price. So, now I never intentionally cheat, and as a result, none... -
ARCHIVED Snoring As A 1st Symptom Of Gluten Exposure?
Molecular Dude posted a topic in Related Issues & Disorders
Hello everyone. I'm curious as to how unique my symptoms are. I find that every time I suffer an accidental gluten exposure, usually as a result of eating in a restaurant, that my first symptom is that I will snore and wake up repeatedly that night and the next. My suspicions are always confirmed on days 3-5 after the exposure when I will experience... -
ARCHIVED Menu Recommendations For Pf Chang's?
Molecular Dude replied to Molecular Dude's topic in Gluten-Free Restaurants
Hey everybody, Thanks for the feedback on PF Chang's. It sounds as though most of you are delighted with many of the items on the gluten-free menu, especially the dessert. I'll keep your suggestions in mind, and look forward to trying them. Thanks -
ARCHIVED Menu Recommendations For Pf Chang's?
Molecular Dude posted a topic in Gluten-Free Restaurants
Hi Everyone, I know that PF Chang's has a gluten-free menu, and I was wondering if there are any favorites that I just have to try? Or, if there is anything unusually bad that I should avoid? Thanks -
ARCHIVED Any History Of Duodenal Or Peptic Ulcers?
Molecular Dude replied to Molecular Dude's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Well, clearly I'm not the only one who has experienced both ulcers and gluten sensitivity. But, the question remains as to whether there is a causal relationship, and which is the chicken and which is the egg if they are in fact intertwined phenomena. If I had to speculate, I would predict that gluten sensitivity is causal since it can cause upper small... -
Greetings, I've always wanted to visit the Galapagos Islands, and we've long intended to go there to celebrate something big (like a significant anniversary), but now that we're both eating gluten-free, we really don't talk about it anymore. Does anyone have experience with travel there and the availability of gluten-free foods? Thanks
