    My blood tests and biopsy were also negative. I decided to do the genetic testing which showed I carry a double copy of the DQ2 gene that predisposes to celiac.     Hi everyone. I am new to the boards and pretty new to the gluten free diet (gluten free since 10/07). The one thing I miss so much is a good loaf of Italian bread- the bread that is crunchy and chewy. Not this gluten free bread. Has anyone found any gluten free bread that resembles Italian bread?
