I actually asked DD what we should have for dinner at her party and she said peaches and pears. She definitely eats more than she used to eat (prior to March when she was diagnosed), but her diet is still pretty limited. Her favorite meals are diced chicken mixed with rice and Velveeta, scrambled eggs, blueberry waffles, and pancakes...not really party... -
DD is turning 3 in a few weeks and we're having a small party for immediate family. Although DD is the only one gluten-free in our family, I'd like to make her party gluten free if I can figure out something easy to make for everyone. I'd prefer not to do deli meats, but I am open to any other suggestions....especially easy ideas for dinner. Thank you!...

If I add flaxseed meal to a muffin or bread recipe that doesn't normally call for flaxseed meal, do I need to adjust the other ingredients? I've seen it as a egg replacer (I think), so I was wondering if I have to decrease the eggs otherwise, or anything else, and if so, by how much, to keep it from being too dry or too moist. Thanks!

Does anyone have a recipe for apple cinnamon muffins? My daughter likes banana chocolate chip muffins, but won't eat the blueberry or pumpkin ones I've tried, so I thought I'd try apple since it's a mild flavor and she used to love apple cereal bars. Any good recipes out there? Thanks!

This is a great recipe! It was my first successful (mostly) gluten free yeast bread. I'm not gluten-free (my DD is), and I really think it really tasted like french bread. DD uses a thermos for lunch at preschool. She's 2.5, so 10 oz works well for her. It's a wide mouth Thermos brand and it's great! I definitely recommend Thermos brand. One tip is to fill it with hot, hot (or microwaved) water for at least 5 minutes in the morning so the food will stay hot longer. I usually go downstairs and fill it with the water while brushing... -
My DD loves Josef cinnamon graham crackers. It took her trying them a few times to get used to them because they're thicker, more like a cookie...but she's 2 and very into texture. DH and I really like them and we're not gluten free. We've bought them online, but our Wegmans carries them now.

I've used Chebe mix to make crackers (they have a recipe on their website). I mixed in cheddar cheese to make goldfish/cheeze-it type crackers and used a mini cookie cutter for the shapes (my daughter is 2). You can vary the type of cheese to change the flavor of the cracker. They were pretty good for a plain, basic cracker.

Anyone else? We bought them, but so far only DH and I (we don't have celiac) have tried them. We haven't given them to our daughter, but I'm curious if anyone else tried them. Just a suggestion...I saw lots of products at Cosco I was interested in but didn't want to buy unless gluten free...you can make a list of the products and product numbers in question while you walk through the store for other purchases, then email Costco about the products in question. While several of the products I asked about contain wheat, I was impressed at how detailed they are...see below, they have info on gluten as well as corn, rice, and soy. Yes, Fruity Pebbles are gluten free. Some mainstream cereals may have the risk of cross contamination, but my daughter eats Fruity Pebbles, Cocoa Pebbles, Trix, and Rice Chex without a problem.
