Sounds like Celiac Disease to me! I also had almost every symptom you listed before I went Gluten Free. The back pain and the extreme fatigue were the worst parts for me. I also felt like some people thought I was making it up. It was making me crazy. You definitely need to get tested. Good Luck! -
Thanks for all the ideas! I am in Jacksonville, FL. I agree that the Pamela's cakes are Very Good, but I was just thinking that I wanted something that tasted close to the cakes I always used to order from The Publix Bakery. YUM!! I think about this all the time as well. I read that your body has the same reaction to gluten if you eat just one crumb of bread, or a whole piece of bread. Can this be true?? -

Glutino makes 4 different gluten free meals now. I have found them at health food stores, and Native Sun. I like the chicken ranchero, even though it's not a great choice for me because I try to avoid nightshades. -

Hey! My question is abut gluten-free cereal. I have been eating gluten-free cornflakes or Gorilla Munch ever since I found out I have Celiac Disease. I haven't found anything else that I like. Thanks for all the replies. So, I went to Bonefish again, and had the Cobb Salad. It had the same salad dressing as the other one I had, and it had pine nuts as well. No problems!! It must have been a fluke. SO GLAD - becaause it was Fabulous!! It also had jerk chicken and mango in it. It's a GREAT gluten-free choice. -

Your post reminded me of a dream I had not too long ago. I dreamed that I jumped out of an airplane and started floating through the beautiful star-lit sky. I kept saying, "I'm Free - I'm Free!" I was thinking of NOTHING but floating. I feel like Celiac Disease has consumed my life. I want to be free again!!

I am getting ready to attempt to make my first gluten free pie crust, and also some gluten free cornbread. Is it ok to substitute different flours? For example, if the pie crust calls for rice flour, can I use coconut flour instead? Does it matter which kind of flour you use as long as it is gluten-free? Thanks!!
