    Many people with celiac simply can not tolerate dairy or soy at first. Dairy because it is broken down in the intestines by the tips of the villi. With damaged villi, this becomes a problem.     You can't always tell if there is gluten by reading the ingredients, and it won't necessarily say gluten free. The fewer the ingredients the better. For instance.....my store brand tortilla chips list whole white corn, corn oil, salt. I KNOW there is no gluten. But when you see things like *natural flavors* listed, that is when you can't be sure.     You haven't been at this long enough to reap any benefits from it, and if you're being "sloppy with the diet", you are not yet gluten free.     I also had hoped to lose weight after going gluten free, but it didn't happen for me until I cut way back on the rice, rice pasta, rice snacks, etc.

    Anyone else notice?........ I was just cruising the other threads and noticed that there are three first time posters...all around the same time........that give very brief answers and have web links in their signatures. One of them doesn't even answer the question.......just pushes his site.

    I did that at first, and gradually fixed less and less of the gluten stuff. My husband can be very picky, but has no problem with gluten-free pasta. The only kind he is not crazy about is the Thai Kitchen noodles. And he said my lasagna was better than the gluteny one I used to make!
