Many people with celiac simply can not tolerate dairy or soy at first. Dairy because it is broken down in the intestines by the tips of the villi. With damaged villi, this becomes a problem. For me, the symptoms are the same as being glutened. I didn't notice an issue with dairy until I had been gluten free for a few weeks. I was starting to feel so much... -

You can't always tell if there is gluten by reading the ingredients, and it won't necessarily say gluten free. The fewer the ingredients the better. For instance.....my store brand tortilla chips list whole white corn, corn oil, salt. I KNOW there is no gluten. But when you see things like *natural flavors* listed, that is when you can't be sure. You haven't been at this long enough to reap any benefits from it, and if you're being "sloppy with the diet", you are not yet gluten free. Take a deep breath............now, start off with a basic meat, fruit and veggies diet for a while. I also had hoped to lose weight after going gluten free, but it didn't happen for me until I cut way back on the rice, rice pasta, rice snacks, etc. -

I did that at first, and gradually fixed less and less of the gluten stuff. My husband can be very picky, but has no problem with gluten-free pasta. The only kind he is not crazy about is the Thai Kitchen noodles. And he said my lasagna was better than the gluteny one I used to make!
