  1. One of our simplest and favorite vegetarian dishes is grilled or pan fried (no breading) eggplant with fire roasted tomatoes. We do a similar thing with polenta too. I'll admit that we usually top it with a bit of parmesan, but I've done without when I didn't have any and it was still very good. As for sweets, the Whole Foods 365 gluten-free line of...
  2. YES!!!!! Info please! I'll mark the friggin date and go to the grand opening, Ian will be thrilled! A side note, Ian has aspirations of being a chef and has over the years made menus and plans and all kinds of things for the restaurant he's going to open when he grows up. He's been very consistent, he always wanted to call it Pizza Panda. Tonight...
  3. Malted wine cooler beverages are not gluten-free, wine based ones (will not say malted on the label) are ok I think. If you're looking for that fruity wine taste, have you considered sangria? It's one of my favorite "dessert" beverages.
  4. Honestly, I haven't checked, LOL. We were told that the lactose free milk tasted bad, so we've been using the Lactaid tablets. Brand name ones are $14.99 for 60 here, and I estimate we'll go through that in about a month or 6 weeks.
  5. So far I have only used prepackaged baking mixes, which is funny when you consider that pre-celiac I did 90% of my baking from scratch. Too nervous to branch out I guess. Anyway, I have a couple of different flour blends here, but I keep seeing reference to xanthan gum in recipes. What is it, why do I need it, and where do I get it? LOL. TIA Amy
  6. We are also dealing with milk issues here. From what the nutritionist explained to me, the villi (that celiac damages) is also where lactase is made, which is the enzyme that breaks down lactose. Without it, you become lactose intolerant. My DS's gut makes almost no lactase. The nutritionist suggested using lactose free products and Lactaid in lieu...
  7. thanks for all your kind words and encouragement, I really appreciate it all and just knowing that others have BTDT with the doubts from others and such is reassuring that I'm not in some weird place, LOL. Thanks also for the link to the thread. I did find it yesterday and spent some time perusing it. It's like so many posters said in that thread, it...
  8. I should clarify that all the meals I personally cook are gluten free, no way am I cooking twice as much, LOL. But at the time, we are keeping things like sandwich bread, cookies, cereal, frozen waffles, etc. in the home. I have gotten everyone to switch over to rice pasta, so that isn't a concern, though I'll admit I didn't think about replacing the colander...
  9. Wow, all that seems so overwhelming, I was focusing on the things that would be difficult to clean or easy to cross contaminate, but different cookware? Really? I keep a pretty clean kitchen, IMO, I had no idea. So, I'm assuming if I should have separate cookware I should also have separate plates and utensils too? What about using the dishwasher or...
  10. I'm reasonably new to this (son has celiac) and want to make absolutely sure I don't miss anything, so help me out. Going to a total gluten-free kitchen isn't really possible without a rebellion from other family members, LOL. What we've done so far: separate toaster ovens (just did that today actually, after finally convincing DH that I can NOT keep...
  11. Thanks, do you know where I could find this post? I did a search for it and came up blank. It sounds like an interesting read. I know my son's first ped. literally told me I was over reacting and that he was perfectly normal. Our newest ped. is wonderful, after hearing his history, she immediately suggested running the blood panel! As for my IL's...
  12. My son was just "officially" diagnosed as celiac after 4 years of suspecting it. We went the whole route if you will, down to the endoscopy, so that we could have the definitive diagnosis b/c he was only moderately symptomatic. Genetics wise, I've always figured it came from my husband's side of the family, his father has a "wheat allergy", and he's always...
  13. without a doubt what I knew all along, that my son has celiac disease. So here's my first question of many, how do you deal with the anger at the people that blew you off for so long when you just KNEW something was wrong with your baby, and how do you get over the guilt that you let them convince you that you were overreacting? I'll admit it, I...
