  1. I'm not sure where to post this question, so I'll put in under "coping with". Every time I read information on Celiacs Disease either on-line or in magazines, many articles begin by saying that Celiacs are at increased risk of a whole range of health problems. They make me feel that at any moment I'm going to keel over. My question is, if you follow the...
  2. Hi again, I forgot to mention that Kinnikinnick does mail order and I also remembered another company called Duinkerken who are based in PEI. They are also peanut/tree nut free facility. I found this flour in my local Sobeys (I live in Calgary, Alberta), and they also do mail order. Hope this helps.
  3. I use Kinnikinnick flours as their facility is nut and peanut free. I have Celiacs, and my daughter has a nut/peanut allergy so this flour works for us. I live in Canada and Kinnikinnick is a Canadian company - I am not sure how available it is in the US. Hope this helps.
  4. Thank you for the reply - that was helpful. I read Van Houtte's website as you suggested and I have another question. Do you think the last sentence about not recommending their flavored coffees to gluten-sensitive individuals is just them covering themselves? On one hand they seem to be saying the coffees are gluten-free, and on the other, not recommending...
  5. I used to drink Van Houtte vanilla flavored coffee at home before my celiac diagnosis two years ago. I now only drink unflavored coffee because I have read so many posts about avoiding flavoring - but I really miss the vanilla flavor. Can anyone recommend a mainstream brand of flavored coffee that does not give them any problems? Unfortunately (or fortunately...
  6. Thanks for the reply, Peter. That was the conclusion I was coming towards (rather slowly!).
  7. I just wanted to share the response I received from Neutrogena in Canada regarding any gluten free list they may have. I also give them a list of their products which I am currently using. (They do not have a gluten free list any more). "While we can tell you that there is no gluten used in the manufacturing of the products you provided, we cannot guarantee...
  8. I can't wait to try this - but I do not have any garfave or sorghum flour. Does anyone know if I can substitute soy flour for this?
  9. Thanks, Margaret (newGFmom). I just made the squares using the recipe you suggested from the Food Philosopher website. It worked perfectly. That website looks really interesting - some good looking recipes. Thanks.
  10. Thanks NewGFMom, that lemon square base looks to be exactly what i need. My kids thank you too because this caramel square recipe is their favorite Christmas treat.
  11. Thank you to everyone who has helped answer my questions. I can give the caramel toffee squares recipe but I will have to give the original gluten-containing recipe as I have yet to substitute this for gluten free, hence my original post. BOTTOM LAYER 1 1/4 cups all-purpose flour 1/4 cup granulated sugar 1/2 cup butter or hard marg, softened 2 tsp...
  12. I would like to begin my Christmas baking (my first gluten free Christmas). I have three questions and I wondered if anyone could help me with them. 1. I've always made chocolate toffee shortbread (a layer of shortbread, a toffee layer on top, finished off with a layer of chocolate). I need a recipe for gluten free shortbread which will hold up to being...
  13. I'm travelling to the UK in July (on Air Transat) and I was wondering if anyone has had a reaction with airline coffee and/or those little pots of milk. I can manage the 7 hour flight with minimal food, but I know I'll need coffee! Any tips or advice with be greatly received. Thanks.
  14. I appreciate all the replies. It really does help to know that we're not alone. I need to get past the stage where all I am thinking about is food. It seems to be consuming (there's an appropriate word!) every minute of the day. I never thought I would find myself in a situation where I would resent my own family for eating food that I can't, and resent...
  15. I was interested to know if others have experienced feeling angry at having celiacs disease and if so, how they cope with it. I was diagnosed in November of 08 so am still new at this. My family (husband and three children) are vegetarians and we have a nut/peanut allergy in the house. I am also now dairy free until I heal so my food choices are quite...
  16. So sorry to hear that you're feeling sad. I was diagnosed in November of last year (pretty much out of the blue - definitely did not expect that diagnosis). My whole family is vegetarian (husband and three children). We also have a peanut/tree nut allergy thrown into the mix. Like you, at first I was overwhelmed. For the first couple of weeks I found...
  17. Thanks so much to everyone who responded. I was beginning to think Iw as going crazy. I'm just beginning week three gluten-free and some of the symptoms have subsided. Brain fog and tiredness are still with me, but I'm putting those down to stress and having to deal with the complications of this new diet. Thanks for all the support.
  18. Thanks for the support. Maybe it's stress that is affecting me - my expectations at the beginning were that I would suddenly feel on top of the world, and, of course, that did not happen. Indigestion, tiredness and stomach pain was not what I was expecting! In fact, the more I think about it, stress probably does play a huge part here - I am the mother...
  19. I am coming up to the 2 week mark on my glute-free diet. I have been extremely careful about accidentally consuming gluten. I am, however, feeling considerably worse than I ever did while consuming gluten. I did not really have any major symptoms prior to diagnosis but now my stomach hurts all the time, is bloated and I feel SO TIRED. Has anyone else...
  20. I have recently been diagnosed with celiac disease. So far the changes in my diet are going well (although I am totally obsessed with deciding what my next meal will be - I know it gets easier from reading other posts). I had very few symptoms before diagnoses (asymptomatic my doctor said). Many people on this board have said they gave up dairy to aid...
  21. I am trying to make a baking mix and I need tapioca flour. I have a box of Club House Minute Tapioca (which is gluten-free). Can I use this in my baking mix?
  22. I made my first gluten-free loaf of bread in the bread machine yesterday using Celimix white bread mix. I followed the directions except I also added about 1 tsp of molasses (for colour) and about a quarter cup of flax seeds (for nutrition). I set my machine for a quick cycle which took about 1 and a half hours. The bread actually tasted really good -...
  23. I have been all over the internet trying to find contact information for Celimix. My daughter has a serious allergy to nuts and peanuts and I need to know if this product would be safe for her. Is there anyone out there who can help me with this? Thanks
