Hi friends, I want to make a cherry pie for tomorrow's feast, but I can not find a good recipe for a double crust pie. The only ones I can find are for a single crust (like pumpkin...) Anybody have a great recipe? Thanks!

ARCHIVED Gluten Free Beer?
River Faerie replied to Nevada13's topic in Gluten-Free Foods, Products, Shopping & Medications
Yep, RedBridge, New Grist, and Bard's... those are your three choices. We have to get them from BevMo, and since the Bard's is mostly always sold out, we buy a case if it is there! The beer is sweeter, and fuller. I find that I can only drink two. So happy to find this beer! Cheers! -
ARCHIVED Tales Of My Stupidity
River Faerie replied to MDRB's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Packaging is certainly part of the problem... Both my son and I have Celiac. He is five, and I have a pretty busy household with daughters, 3 and 2. I went to a heath food type store where they mostly have the gluten-free stuff in one aisle. I went in to buy some prepackaged items for my boy's kindergarten lunches. I did the same thing! Kind of. I bought... -
Wow! Good for you running a marathon! I am a 13.1 type runner. I really enjoy it, but with 3 kids five and under, I can't commit more time than I already do to my running schedule. I guess I'll have to wait until they get a bit older for the full... but I certainly want to run one! I can tell you that I was diagnosed with Celiac a little over a year ago...

ARCHIVED How To Go About This?
River Faerie replied to Heidi S.'s topic in Parents, Friends and Loved Ones of Celiacs
I am really surprised at the daycare too. My son was just diasgnosed with Celiac, and started kindergarten. It wasn't like I had a note to say that he was... I went online and found some information pertaining to kids and basically wrote my own note explaining the disease, what syptoms arise in kids inluding what I see happen in him, and then wrote down what... -
ARCHIVED My Vent....
River Faerie replied to Amyleigh0007's topic in Parents, Friends and Loved Ones of Celiacs
This is a really tough situation. I am also a teacher, but sadly received a pink slip this year... which may have been a blessing I suppose. My son, five years old, just started kindergarten, and was just diagnosed with Celiac although my Mama instinct told me so a while ago. I also was diagnosed last year after several years of struggle and pain, so at least... -
ARCHIVED I Need A gluten-free Persimmon Cookie Recipe
River Faerie posted a topic in Gluten-Free Recipes & Cooking Tips
Hi, My lovely box of organic fruits and veggies contained persimmons in it today. Last year, in my pre gluten-free days, I made super yummy, moist and delicious cookies. Does anybody have a delicious recipe for persimmon cookies, or maybe bread? It would be helpful if it contained easy to get flour substitutes. I always get frustrated when a recipe calls... -
ARCHIVED gluten-free And Nitrate Free Bacon?
River Faerie replied to Jaimepsalm63's topic in Gluten-Free Foods, Products, Shopping & Medications
I know that nitrates are not good for a person, but do they set off Celiac symptoms? My tummy has been sooo bloated the past couple days, and we did have "breakfast for dinner" the other night... Hmmm? Could that be my trouble? -
My tummy hurts! I have been gluten free almost three months. At first it was really hard, and I still had the gut wrenching pain. It was terrible. I actually felt worse than I did when I was eating gluten. Now that has passed, but my tummy is totally bloated! What gives? Is it the dairy? That was never a problem before... Is it the soy? I read through...

ARCHIVED Caramel Coloring?
River Faerie replied to River Faerie's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow, thanks for the great resources! I spent some time looking at the gluten-free in SD website. Very helpful! I think I have a tendency to get wrapped up in all that I can't have, and I forget that there really are lots of things I can have. I was so happy to see that Cheetos are on the ok list. I can give up lots of things, but it's nice to know that I... -
ARCHIVED Caramel Coloring?
River Faerie posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Hi Guys, I need some help. New to the diet, and in my third month... it is getting better, but still have some bloating issues when something slips past. I usually try to avoid anything that says caramel coloring, but read on another post that Coca Cola was actually ok. Is this true? I would be SOOO happy! Second question: I was just reading the ingredients... -
ARCHIVED Celiac And Irregular Menstrual Cycles
River Faerie replied to MissDigital's topic in Coping with Celiac Disease
Hey Gals, I too, was wondering about this. My issue is the other way around. I did not start my period until I was almost 16. Once I started, it never came regularly. In fact, I did not have my period but 3 or four times a year. I went to the Dr. when I was about 25, due to crazy pelvic pain. (Looking back, I think this was my first misdiagnosed Celiac moment... -

River Faerie replied to River Faerie's topic in Sports and Fitness
You guys are so awesome. Isn't it wonderful to have a wealth of resources who combined have more knowledge than the specialists who treat us? Thank you for all of the support, suggestions, and kindness. I originally posted my experience to try to help other people who are new at this, and in doing so, I feel like I have a lot of new info and ideas to try... -
ARCHIVED Scary 1/2 Marathon At Disneyland Today
River Faerie replied to River Faerie's topic in Sports and Fitness
Thanks William for the chuckle! No, no marines, just some old fashioned Irish blood! I used to think my dad was stubborn, and it turns out I am just like him! So, it's been a week since my 1/2 marathon. I have been sore all week, but feeling pretty good as far as energy levels. I think I may go out for a quick three mile walk pushing my baby girl this... -
Hi Friends, Ok, just got home from Disneyland, and wanted to relay my story only because it might help someone else out, and because I would love some direct feedback. First of all my gluten free days began on 8-1-08. Since that day, my training for the 1/2 marathon came to an abrupt halt as I was scrambling around trying to make sense of it all; angry...

ARCHIVED In Search Of gluten-free Staples
River Faerie posted a topic in Gluten-Free Recipes & Cooking Tips
Hi Friends, After reading another forum, I went to a site that I had not previously found. It was Karina's Recipes. Oh my gosh, it was like finding an oasis in the middle of a desert! I am new, and in week four. If you are new like me, I highly suggest taking a look. There is hope! I have been doing well in my eating and am committed to this new lifestyle... -
ARCHIVED Slow Cooker Recipes
River Faerie replied to aim301's topic in Gluten-Free Recipes & Cooking Tips
OMG!!! I was just on the Karina's Recipe website for the last hour! I am inspired once again. I am in my fourth week of gluten-free eating... feeling totally dull and well, uninspired. Have you guys seen the photo of the carrot cake? The Gypsy soda bread? Ha! I am feeling giddy and excited at the prospect of sinking my teeth into something soft and delicious... -
You guys are so great! It really does feel better knowing that I am not alone and can seek help and support here. M & M's are my saving grace too. I read somewhere that Snicker's are also ok. Is that true? I do confess, I had a very lovely dinner of corn tortillas with melted cheese, cilantro, and a few thin slices of proscuitto. Super yum! This morning...

Ooooh, I am so with you. After reading lots of these forums, I have decided that time must go by... The people who are ok with this have dealt with it for a while and are pros. I am in my third week, and still feel miserable! It stinks! I am a middle school teacher with three kids 4 and under. Like I have time to cook for myself! I can barely get everyone...

ARCHIVED Does Gluten Effect Get Stronger?
River Faerie replied to River Faerie's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thanks you guys for all of the help. It's really tough. It sounds like it is the same for me... I have felt pretty crappy for a long time. Not all of the time, but definately enough to notice and seek change. Now I don't always feel better even though I feel like I give so much up. Just how much rice and potatoes can a girl eat?! This gluten free diet is... -

ARCHIVED Does Gluten Effect Get Stronger?
River Faerie posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi, I am a newbie, and have a ton of questions. I am on week three of 100% gluten free diet, so that I can go back for blood work to have the diagnosis confirmed. I had the tummy probe and biospsy already... My diet is telling me that I don't really need to be stuck in the arm again, but whatever! I do feel better although the first few weeks were really... -
ARCHIVED Food Selections In The Common Market
River Faerie posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Hi, I am brand new to this, and here's my second post already! I live in a teeny, tiny town called Kernville in CA. The population is less than 2,000. We do have a small market in our town, and a Vons about 12 miles away. The closest Trader Joes is down in Bakersfield, about an hour and fifteen minute trek. (Any ideas how I can get the frozen waffles home... -
ARCHIVED What Can You Tell Me About Bread Makers?
River Faerie posted a topic in Gluten-Free Recipes & Cooking Tips
Hi all, I am a complete newbie to the world of gluten intolerance, and was diagnosed by blood work, tummy probe/biopsy, and am now in the three month "100% no gluten" period to determine if it really is Celiac. My instinct is yes, because a few weeks into this adventure, my skin is more clear, my stomache isn't in continual knots, and I feel fairly calm...
