  1. I have seen several gluten-free cakes online and they don't have icing on them. Is icing ok for someone on a gluten-free diet to have? I sure hope so! I'm looking for a good vanilla gluten-free cake as well as a chocolate one. Does anyone have any favorites? Thanks so much! Karen
  2. I don't know. What would the difference between the two tests mean?
  3. Oh, no. I am the spouse. My husband is the Marine. Thanks again everyone! I will be eliminating all the allergens too. I really appreciate the comments and support.
  4. Thanks for the replies! What do we normally eat? That's a good question. I try to reduce meats to having it occasionally. Once or twice a week we will have a chicken meal and a beef meal. I also like to make lentil, split pea, or bean soups (but now discover I have a low allergy to beans). Lentils and split peas don't fit into the bean category, do...
  5. Thank you! I appreciate the answers to my most basic questions. I know answering newbie questions can become redundant to those of you who have been here a while and i appreciate your time in answering. I think I get it. An allergy to wheat has nothing to do with the possibility that gluten could be destroying my intestines. As for having a low...
  6. Please help me figure out what my lab results mean. The nurse I have been talking too seems out of her element and recommended I call the Semper Fit number or the Diabetes number for help on what my diet should be. I'm dealing with the military system and this is how things go. She also told me I have celiacs because some test said my results were "active...
  7. I am unsure on what to make for dinners now that they need to be gluten-free. I like to cook from scratch and like using veggies so I know it shouldn't be too hard, but I feel overwhelmed - like a deer in the headlights. Is there a single blog (or cookbook) that can help me decide what to serve me and my family? My family will have to go gluten-free with...
  8. I know I need to build my iron back up. My blood test revealed a reading of 9.6 and, as I understand it, it should be around 12.5 or 13. I just started taking a gluten-free multivitamin with iron. The amount of iron for the rda is 100%. Will this be enough to get my iron back up if I stick to a gluten-free diet? I have looked for gluten-free iron pills...
  9. I'm looking forward to trying this recipe! I love angel food cake. Are you saying with your blend of tapioca, rice, and potato flours you don't get a gritty taste? Or with the Domata flour you don't? If you recommend the Domata flour, is there a particular store to find it in or is it something to order online? Thanks so much! I must try this...
  10. Thanks for the reply. Do these numbers reveal *how* much of a reaction I have? Do they reveal the severity or mildness of the problem On a different note, why can't I see this topic in the forum. When I posted it, it posted but I can't see it in the forum. I only knew there was an answer because it showed as the most current topic on the main forum...
  11. I had a blood test done two weeks ago and last Thursday called in for my lab results. I talked to a nurse (I believe) and she rattled off a bunch of information and I tried to record some of what she was saying. First off, she said I was anemic. My number was 9.6 which was 2.5 points low. She said I needed to take a multi vitamin. Other letters and...
  12. I'm trying to do my own research before springing into action and asking tons of questions. I can't find where I might buy these. Trader Joes, Whole Foods, Wegmans.......??? Thank you! Karen
  13. Thanks for the replies and the welcome. I wish I didn't need to be welcomed though. I can probably do the recommended replacements without too much anguish. I've been wanting new wooden spoons anyway. Hmmmmm..... I guess my relatively new silicone spoons and spatulas need to go? These new little gadgets I have excite me as much as cup holders...
  14. I found out a few days ago that I am celiac positive and have a GI appointment in a few weeks. I suppose I will learn more then. For now I know that I am anemic and a number revealing this was 9.6, being 2.5 points low. I was told to take a multi vitamin. The nurse that called me also rattled off this sort of stuff: She rattled off TG ABIGG..........
