  1. Thank you, thank you! And as I am new at this, are other meats risky as well? If unseasoned -- fish, steak, beef, turkey, etc? Just curious. Thanks much!!
  2. Yes and yes! Definitely see an allergist along with a gastro -- the more answers you get, the better. But just remember that you are the only one who lives inside your body and you know how you feel best -- BETTER than ANYONE ELSE. Don't let them tell you nothing is wrong when you know nothing is wrong. I had many similar symptoms to yours before going...
  3. Yes yes! I am one of the many! I have had many misdiagnoses...IBS, milk protein intolerance, anorexia, food allergies...I was tested for pretty much any and everything from mono and anemia to cancer. The road's been tough, but now that I've found the gluten-free way, it's been amazingly better! I do still have a diagnosis of about 20 food allergies, but am...
  4. I, too, have tested negative for Celiac (both bloodwork and biopsy), but my life has truly been changed with the gluten-free diet. Unfortunately, when I tested negative to Celiac, I didn't know I could still have a gluten intolerance, so I continued to make myself sick for another year by eating gluten-filled foods. It's frustrating how confusing the doctors...
  5. That sounds DELICIOUS!! How much quinoa did you use?
  6. What is the likelihood that gluten would be in chicken? Especially at a restaurant? Just curious -- thanks!
  7. DEFINITELY read "Healthier Without Wheat"!! It's an amazing book with a lot of information and insight regarding gluten-intolerance. It provides a detailed analysis of the history and current research on gluten-intolerance as well as the signs, symptoms, and treatments of the problem. Very helpful!!
  8. Allergies (Dx via skin prick test last November): Soy Peanuts Treenuts Shellfish Legumes (esp. peas, green beans, lima beans, lentils) Hops Buckwheat Sunflower Seed Seasame Seed Cottonseed Poppyseed Intolerances (found via trial and error): Gluten Dairy Egg What do I eat? Wow if I had a nickel for everytime I was asked...
  9. I have had mine tested a couple times in the past and have had normal results. However, thyroid problems run rampant in my family (my mom has Grave's disease) so it's likely I have developed a thyroid problem as well... Even if you have tested normal in the past, you can still develop thyroid problems, so I definitely say get tested again! I have a blood...
  10. Salads salads salads!! Both vegge and fruit salads are easy and taste great -- you can even make a bigger batch and use it for a couple days. I tend to bring a lot of portable fruits and veges (carrots, celery, broccoli, applesauce/apples, grapes, oranges, etc) Rice cakes, crackers or cereal are easy to transport as a side. As far as the lunch meat...I definitely...
  11. So I went gluten-free about a month ago after years of struggling with my health and multiple misdiagnoses. My symptoms included mostly GI prolems, abodominal pain, soreness, random hives, anemia, fatigue, etc. About a year ago I was diagnosed with 20-30 different food allergies via skin testing. I have been avoiding all this food since I was diagnosed,...
  12. Chebe bread -- I just cannot seem to figure this stuff out! Is the inside of the roll supposed to be gummy?? This happened when I used both the Cinnamon and Original mixes. The only thing to blame could be that I used egg substitutes instead of real eggs (applesauce in the Cinnamon mix and a sub in the Original mix). But I wouldn't think that would alter...
