  1. Have you ever tried to use it to make turkey stuffing?

    I might try it with a smaller chicken before I ask the whole family to have gluten-free turkey stuffing, but I'm so excited at the prospect, I can't even tell you.

    I've tried cornbread dressing several times and it's just not right. What I really need to do is belly up to my friend's table, cause she's been making real southern cornbread dressing forever (I use her cornbread recipe... always has been gluten-free).

  2. I wasn't thinking... that's what. Of course you're all right. I was such a dolt to think that picking croutons off my salad was okay. I really was thinking that if I'm not having symptoms, I'm okay.

    DUH... that's why I come here. For the good advice I always get.

  3. I'm only 3 years gluten-free, but my middle daughter's just been diagnosed and I realize that it's become a pretty easy part of my life. She's thrilled that she doesn't have to find out all I've found out on her own, but she's still in the shock of it and wondering, too, what's left for her to eat.

    For example... she's a vegetarian and loved veggie burgers. I just found a good recipe for black bean burgers and emailed her the recipe. She loves to cook, which also helps a lot.

    When we go out I find waiters and waitresses are as friendly and accommodating as you are friendly to them. I've also found more and more celiacs as I talk about it to waitstaff. I know I can always order some plain fish or meat or a salad... I am not so sensitive that I can't just pick off the croutons and blow any crumbs away. (I don't pull stuff off of bread/rolls anymore tho)

    Finding Manna from Anna bread really helped me. Being able to make a sandwich is really satisfying.

    Good luck! And don't give up!! It DOES get easier.

  4. I never lost weight... even having diarrhea for months and months. Since going gluten-free I've gained about 30!! My DD's doc told her people with celiac disease either lose weight or gain it. She got the wt. loss part, I didn't.

    I can't seem to get it off either... so I'm stepping up my exercise in a big way hoping that'll help! If I'm not lighter, at least I'll be in good physical shape.

  5. I believe I was the bread queen. I used to make the most delicious braided Challah breads and a round country loaf with a crusty outside... I am drooling here!! That's my first and foremost wish!! Bread and butter!!!

    Second I'd choose Pizza Hut's Stuffed Crust pizza with pepperoni and pineapple... and beer (that's ONE food!!)

    Lastly, real chocolate cake... made with flour... light and fluffy... with chocolate frosting!!

  6. I'm with SharonF... I'd have spoken to the manager. Would they react the same way if it was a kid with a peanut allergy and the mom was asking those questions? I think not.

    I've been super lucky lately. The last several times I've gone out to eat, I've had a waitperson who knows someone with celiac disease! They've been very supportive and helpful...

    Sorry your experience was so awful!! Don't give up tho!

  7. Dang... <_< I was hoping I'd stumbled on to why I can't lose weight... other than the fact that I EAT too much. haha

    No constipation whatsoever!

    I drink plenty of water... exercise (more recently)... eat 2 Viactiv calcium chews a day.

    My babe of a significant other is flabbergasted that I don't go every day!! I don't give it a thought... till it's like 5 days... and then I wonder more than worry.

  8. I've been gluten-free for 3 years. I didn't lose weight initially... I attributed that to my swift diagnosis.

    I started gaining weight. At first I attributed that to eating TONS of food I was allowed to eat to compensate (in my brain) for all that I can never have again. Once I got over that... I ate more normally and continue to eat well (lots of fruits/veggies, etc).

    So... my intestines that used to shoot thru whatever I ate at warp speed, have slowed considerably. Not to be too graphic here... but I can go days and days (like 3-5??) without moving my bowels... and when I do, I'm not constipated or uncomfortable at all. I just don't have to go often.

    So, now I'm wondering if my food is sticking around in my intestines and nutrients are just absorbing and absorbing and absorbing and it's causing me to gain weight. Maybe I've gone from malabsorption to hyperabsorption.

    Whattya think??

  9. I sent her some Manna from Anna bread mixes... that's been my greatest find so far!!

    Interestingly, her doctor told her she was LUCY to be diagnosed at 25 (I wondered if it wasn't like telling the bride it's good luck when it pours rain on her wedding day... ha) because she will avoid many problems in the future by going gluten-free now... like unexplained anemia and osteoporosis.

    She's thrilled to hear too that more restaurants are offering gluten-free menus.

    Like everyone's said... and I've said in the past... there are so many worse things... this is nothing.

  10. I dream!! I read an article recently about a restaurant in NYC that serves gluten-free pizza and beer!

    Her diagnosis is definite. Luckily she loves to cook... I swear that was my saving grace... knowing how many foods are made and what to avoid at restaurants, etc. It's an ongoing education.

    I told her to get herself in here ASAP as this is where the info and answers to questions are!
