  1. We need Allergen free idea's

    specifically: Gluten free, peanut free, egg free and vegetarian prepackaged items

    If there is a easy Gluten free replacement for something I will take those as well

    example: Oreo's are peanut, egg and vegetarian but not gluten free, but there are Oreo-like cookies available gluten-free to sub with.

    These are for special events so they do not have to be healthy, but not candy like either.

  2. My daughter and i are planning a trip to the mall, she has been looking forward to this and we will be there around lunch time, I was wondering if anyone know of any gluten-free fast foods available out there? Or should I pack a lunch? Thanks!

    I have worked in Arby's and Mcdonalds. I don't care what their menu says they are NOT safe. Cross contamination is very likely, practically positive.

    My opinion, pack a lunch it is the safest.

  3. My celiac disease's 2nd grade teacher is having the kids stir and mix a gingerbread cookie recipe in the classroom. I asked for my girl to be removed and I will provide an alternative finished cookie for her to decorate the next day when they decorate theirs.

    The teacher is trying to keep her in the class during this activity so she does not feel left out. I already said I didn't think it was good environment for her to be in. The teacher is trying to be considerate and nice and include my girl, She even printed me a recipe for gluten free gingerbread mix and asked me to supply the flour for it.

    Has anyone had their child in a classroom where they were exposed to GLuten foods being mixed and stirred and NOT had problems?

    Because I can't imagine how this will work! I am not going in to sterilize the room afterwards so what are my options?

  4. On another note: You do not have to be underweight or below average height to have Celiac's. A good example is my daughter who was diagnosed after nearly 2 yrs constipation problems.

    She was, and is, in the 98th percentile for wt and ht. In addition to being gluten free she is on a heathy lifestyle program for her high BMI.

    Being in high percentile is not the norm for celiac disease but certainly not unheard of either.

  5. I'm looking for a good substitute to make sausage balls. The recipe I used in the past was 1 lb sausage, 2 cups cheese and 2 - 3cups bisquick.

    I've used Pamela's baking mix and it tastes okay. I used gluten-free bisquick today and they are really hard and heavy.

    Does anyone have any suggestions for this? I'm trying to pull some holiday recipes together.

  6. The doctor just confirmed the celiac..... What do you give your kids for breakfast? My daughter drinks soy milk all the time, is that ok or should I switch to rice milk?

    Besides all the obvious sources of gluten wheat, spelt, barley, rye, oats are there any other foods I should be aware of that has gluten in it?

    Sorry if I'm rambling... the realization of it all is hitting me hard.

    Did you get a list from the dietician? Malt and Brown rice syrup is taboo, and anything with Natural flavorings is taboo unless you can confirm it is Gluten free Also, If at the end of the the ingredient list it says: May contain traces of is a no no

    Anything saying made in a shared facility many people will say is a no no , but I judge it based on the companies products. I was very strict first 6 months then I eased up on these products.

    here's Few ideas I posted for someone else

    Breakfast

    easy = gluten-free cereal or gluten-free Oatmeal with dried fruits , nuts, whatever , yogurt smoothies, gluten-free bagel or english with Pbutter or jelly or cream cheese

    cook= Eggs w/canadian bacon and fruit, Pamela's pancakes I make big batches and freeze extra's, eggs and grits,

    Lunch

    Easy = Tuna or chicken w/salad, Trader joe's has a few gluten-free frozen meals, mostly mexican and Indian style are microwaveable, Yogurt w/fruit and nuts, gluten-free soups , gluten-free cold cuts w/cheese and Corn tortilla,

    Cook = Burgers no bun unless you like the gluten-free buns, stir fry veggies and chicken, rice and beans

    Dinner: make large dinner for leftovers

    easy = gluten-free takeout hahaha, Mexican, Outback, etc.., Spaghetti and meatsauce, crock pot a soup or stew ,

    Cook = any protein and veggie just use gluten-free sauces, and substitue Corn or brown rice pasta

    Just remember any fruit , vegetable, meat, or fish is ok plain. Fresh herbs and simple spices are usually ok ie: Ginger, garlic, oregano, thyme,etc.. usually fine , A multi spice concoction I would be weary of.

    Do you need safe product list ?

    For starters

    LaChoy soy sauce or San J Tamari,

    Many Wish Bone salad dressing says Gluten free on back

    Bob's red mills has gluten-free Oats

    Most Old El paso products are safe

    Tikyada pasta are pretty good or Bionatura

    cereal = select Chex, Envirokids, select Natures path , Kix,

    It is overwhelming at first but in 6 months it will be a whole lot better.

  7. I agree ,It's very frustrating. Some people just refuse to believe.

    Anyone over 55 yrs of age grew up without all these diagnosed allergens around and think it's our generation being overly careful. I swear just because an epi-pen isn't required they think it's not real.

    I don't know if we can make them see the light, the best we can do is pack all their food, provide all paper goods and plastic ware for serving it on give them good instructions and hope for the best.

  8. I think this may be our last shared Thanksgiving. We are doing 2 turkeys one with bread stuffing , one without. I am doing all the side vegetables because I need to be sure!!!I I am doing a rice side dish again to be sure and 2 desserts in which I don't know if anyone else will try, but I want my family to have a choice.

    This would be fine if I was staying home but I gotta truck it over to my sisters and be on guard all day. We have family in from out of town so I cannot stay home , I don't want to stay home, but YES it's a lot of work for little reward. But Thanksgiving always is.

    My family did not change the menu one iota to accommadate our new diagnosis. Also they informed me they are going out to a non gluten free chinese restaurant while the out of towners are here. You know the saying you can't pick your family, these are the times we wish we could. :)

  9. My girl was diagnosed at almost 7yrs old. After almost 2 yrs of being treated for severe constipation and compacted stool in her outstretched colon and on Miralax for 1 1/2 yrs of that time she was finally diagnosed with Celiac disease.

    It took a GI specialist to get the diagnosis. Our Pedi was treating her for the constipation with encouraging high fiber and whole grains increases in her diet. This is when the daily stomach pains started.

    At 7 1/2 she still has outstretched colon (6 month gluten-free) cannot stay dry thru the night and when she gets accidental gluten has diarrhea accidents also. It's a long process of healing but she is soo much better on the gluten free lifestyle.

    We were also very close to the cleansing enema's, but chose to do weekend cleanings with milk of magnesia instead. Wel'd start on Friday after school and did this for a months long of weekends.

    Haven't had any problems after the first 2 months going gluten-free

    I forgot to mention we were also told to sign up for the "Incontinence classes" in the Urology dept. at children's hospital. They figured her accidents were bad potty training habits. NOT!

    We are our children's only advocates.

  10. I agree with mushroom, probiotics and easily digestible foods for a while. Are you completely gluten free, because otherwise the pains will continue.

    Our nutritionist's example was this :A thumbnail full of gluten is enough to cause Villi damage. That includes cross contamination and air particles.

    I will add when my girl was put on EX-lax her tummy pains were extra bad, due to the cramping from it. In addition we were also told a Psychiatrist might be next step for the "accidents" she was having. Umm! I considered that a cop-out from the DR. who had only seen her twice at that point.

  11. y 6 year old has been suffering from chronic constipation since she was two. I started to notice because just before she was two she was trained for peeing. but she would poop these little poops smears or sometimes D all day long up to 10 x or more a day. so i took the pull-ups away thinking she was being lazy. not the case at all. started taking her to the doc they gave her laxatives enemas told me once that it was my potty training told me that she was severley impacted. the had her on restorolax for a year and the pediatrition signed off on her case. i had to get another referal to see him again. i went and demanded he send me to a gastro doc. we have an app for them in jan. my family doc is sending us to calgary to a childrens clinic that speacializes in children who soil are constipated or wet the bed things like that so we are to go there in dec. i am waiting on test results from my doc for celiacs and her Iga and igg levels aswell. has anyone had any ting similar. right now we relive her constipation with an enema because that is what we were told to do.

  12. Well I start totally gluten free tomorrow, wish me luck! I have been doing gluten free lunches for a couple weeks now but have been giving normal breakfasts and snacks until I used up what I had! Its going to be an interesting transition!!

    Also I wanted to share this :

    Walmart sells the Envirokids cereals which also make good snacks for $3 a box, which is about $1 less than grocers. BTW Walmart has a small Gluten free section to shop in.

    Target sells Annies mac and cheese for $1.89 which is also about $1 less a box than grocers. Some Targets have gluten-free grocer sections but not all.

    Since you run a daycare you know how important it is to shop around. :-)

    Market Basket has their own brand of gluten-free foods they put on sale once a month or so. The pumpkin muffins are very good.

    My local health food store is a great place to get gluten-free foods at better than chain store prices.

  13. Hi, Wow what an undertaking, I applaud your enthusiasm.

    I think if you put up a sign saying gluten-free pie crust taste as good as regular or something to that effect people without Celiac's would buy it as well. Make note that crusts were made in a gluten free home because our biggest fears are cross contamination as someone noted earlier. You also might want to supply a recipe with them for the novice. The hardest part is making them and selling them for a reasonably price cause you can't compare to the frozen ready made ones in the grocers. It costs 3x as much to do gluten-free pie crusts.

    I have made 2 pies so far and will make another for T-giving, my family doesn't believe they are good so they are buying a Apple pie for themselves. See even with family it's hard to convince.

    I will say this, you have to inform people there is a big difference in texture, it doesn't roll out the same because of the lack of gluten, so getting the top layer on was more difficult . It will be even more so after defrosting because of the extra moisture you get. I guess if you goal is to freeze it in pie pans it will easy enough but you cannot freeze it in sheets it will break apart as defrosting, but as lump dough should be fine though.

    I only made them twice, both times were a pain in the butt , but were delicious so it was worth me doing it again on occasion, like now.

  14. My 6 yr old had hers in April.

    They put them to sleep before they IV them so that makes it super easy on everyone, child especially. Be there in recovery, do not wander around, the procedure is very quick 45 minutes or so. We witnessed a 3 yr old wake up without mom or dad around and he was really scared. As soon as your child is fully awake they remove the Iv quickly, kuddo's to the nurses . Our girl got a popsicle right away which kept her happy. She had a very mildly sore throat that day only, and other than red marks on her chest from the monitor patches she was great.

    All in all we had a very good experience and the peace of mind getting a definitive diagnosis was worth the anxiety we experienced . We were told immediately it strongly appeared to be Celiac but was confirmed via our Dr in 5 days.

  15. I run a home daycare with 7 kids and have just currently made my home and daycare gluten free because my 3 1/2 year old has been diagnosed with celiac. I need to provide a grain at breakfast, one snack, and lunch since I am a licensed provider that used the food program. I am finding that its super spendy buying grains and the flours I need to bake home made items. I could really use some advice and tips if you have any! My daughter also has a metabolic disorder and cant have more than 4 grams of fat per meal and cant have medium chain fats like butter, avocado, coconut. So we are pretty limited! Thank you!!!

    Running a gluten-free daycare with 7 kids and not going broke will definitely take some creativity. I am sure as time goes on you will get more and more idea's.

    Your options with the 4 gluten-free chex cereals are pretty versatile:

    Use as cereal and since there are 4 flavors you should be able to please everyone

    you can make a gluten-free trail mix with raisins and chopped dried fruits, marshmallow etc..

    use the corn chex crushed as breading on chicken tenders( these are really good)

    goto the chex website and check out all their recipes for snacks it's worth the eyestrain :)

    rice cakes are also a good option, quakers are safe and available everywhere(not all flavors are safe, check first)

    you can dress them up with cream cheese,p butter or sunbutter (allergies?) , jam

    pancakes are not just for breakfast, they make fun sandwiches and can be a lunch with a protein and fruit as well.

    pigs in a blanket can still be gluten-free , use Jones sausage links add a fruit

    I make big batches and freeze the leftovers and microwave on defrost when needed. You could do that on Sun nights for the week!

    Corn chips and tortilla chips with salsa or guacomole , cheese, ground beef , whatever you can think of

    If your celiac child can do gluten-free oats then you have another breakfast, and snack.

    Don't forget you can make your own granola with them,

    Nature valley has 2 gluten-free bars and my DD can handle the dark chocolate and oats and honey flavors

  16. My church sponsors a big Thanksgiving meal for a group of disadvantaged people (mental illness to simply being unable to live alone). I'm making a turkey, so my husband can eat the turkey without worrying about being glutined. I'm also going to bake a gluten-free pumpkin pie, and bringing a slice to the dinner as well as a gluten-free ciabatta roll. I feel the mashed potatoes will be OK, as the in structions specified real potatoes, milk and butter.

    Anyway, is there any brand of turkey I should avoid? What about ordering a fresh turkey? Any help would be appreciated. Thanks!

    The real worry with the mashed potatoes is the sharing of utensils cc from butter is very common. If they use the butter for the rolls then cut of a slice for potatoes ,it would be a small amount but still it happens. I am specifying a new stick must be used for potatoes and nothing else as this year it's at my sisters.

  17. To start with: All wheat, rye and barley based goods. AKA all boxed products that do not say Gluten free, and use only Gluten free sauces and dressings.

    Wish bone has many salad dressings that say gluten free on them, also San J Tamari sauce, La Choy soy sauce , Bullseye BBQ sauce

    Chex cereals

    Use plain spices not combo seasonings until you know which are safe.

    Corn tortilla to replace bread rollups

    Tostito's corn chips or Fritos or Udi's potato chips chips for something crunchy

    Plain hershey's chocolate for some comfort :)

    It's a huge list of do's and don'ts but these are starters.

  18. No peanut allergies?? At our school, peanuts/peanut butter is allowed in the cafeteria but not in any of the classrooms? Am I coming across as a trouble maker yet?? :P

    Homemade chex mix with peanuts if you can, otherwise without. You can also make "rice crispy" type treats with rice chex instead of the more expensive gluten-free versions of rice crispies.

    Popcorn

    Fruit Rollups . . . I use this term generically, some of them are better (more fruit/less sugar-corn syrup) than others.

    Nope, no peanut allergies, PB is allowed in this classroom as well as in cafeteria. Can't make gluten-free rice krispie treats as marshmallow contain gelatin (animal product) and we have vegetarian in class.
