  1. I made this for my 1st gluten-free Thanksgiving.... it's pretty tasty!

    Pumpkin Spice Cake (gluten-free)

    Yield: 8 servings

    Ingredients:

    •1 cup pumpkin puree

    •2/3 cup pure maple syrup

    •4 large eggs

    •1/2 tsp pure vanilla extract

    •2 1/4 cups Honeyville Blanched Almond Flour

    •1/2 tsp sea salt

    •1 tsp baking soda

    •2 tsp pumpkin pie spice

    Cream Cheese Frosting

    •6 oz organic cream cheese, room temp

    •1/3 cup raw honey

    •1 tsp vanilla

    •1 cup heavy cream (raw milk cream, or pasteurized only is best)

    Directions:

    1. First make the batter: Preheat oven to 350 degrees. Remove the bottom round of a 9x3-inch springform pan. Using parchment paper, trace the bottom round and cut the paper to fit the bottom neatly. Place the bottom back into the springform pan and secure in place. Lightly oil the pan and then place the parchment cut-out into the bottom of the pan and lightly oil it as well. (If you don't have a springform pan, you can use a parchment-lined 9x9-inch baking dish instead.)

    2. In a small bowl, combine the almond flour, baking soda, salt and pumpkin spice. Set aside.

    3. Using an electric hand mixer, blend (on low speed) the pumpkin puree, maple syrup, eggs and vanilla for 1- 2 minutes, until well combined. Slowly add the dry ingredients into the wet and continue mixing for a full minute, until smooth and well blended.

    4. Pour batter into prepared pan, making sure to even out the top.

    5. Bake for approximately 25-28 minutes, until a toothpick insert in center comes out clean. Allow to cool completely, then place in the fridge to chill.

    6. While the cake is baking, make the frosting: Using an electric hand mixer, blend together the first three Cream Cheese Frosting ingredients until smooth and creamy.

    7. In a separate bowl, whip the cream until soft, stiff peaks form.

    8. Using a rubber spatula, add the cream cheese mixture to the whipped cream and gently fold the two together. Refrigerate frosting until cake is completely cooled.

    9. If using a springform pan, remove the cake from the pan and place on a cake stand.

    10. Frost the chilled cake and serve immediately. (Or refrigerate up to 12 hours before serving.) Enjoy.

  2. I was logged into the mobile site on my iPhone last night. When I scrolled down to look at the topics at the bottom it says "Get the IPS Communities App for iphone now". Is there a way to use this app to look at this forum? When I try to put it in the app it asks for Community Name and URL Address. Is there something specific I should put in there. I tried what is in the address bar when I log into the site on my computer but it doesn't let me access this site on the app. If anyone has any information about this, I would really appreciate it!

  3. I am two months gluten-free too. I noticed I had the same problems as you a few weeks ago and realized it was from greasy food. Also if you don't have a gallbladder that could make that happen too. One of my doctors also told me to eat naturally gluten-free foods too and eat every few hours to keep everything alright. It will get better. Mine is starting to subside but since I no longer have a GB it will probably still happen sometimes.

  4. Irish Heart recommended Dr. Gusten to me. He works for Saratoga Schenectady Gastroenterology in all of their offices. I'm going to see him next week. He is great from what I've heard. DO NOT go to Dr. Boyar. He was my doctor and he was of no help to me. Having a positive Celiac test meant nothing to him. Good Luck!! :)

  5. I've been eating mostly chicken, veggies, fruit , rice and too many chocolate rice cakes O_O. I've been feeling a lot better but I'm still getting super hungry in the middle of the day. Tonight I'm actually making a bunch of food for the rest of the week so I have food with me at all times. I'm making stuffed chicken with spinach and tomatoes, roasted chickpeas as a snack and some really good dairy free flour less cookies! I however made my first two cc issues. I made a taco dip last night and didnt read the back of the chili can, and then I had half a gin and tonic. My body is definitely not ready for alcohol yet. I just can't wait to go back to the dr and tell them how great I'm feeling. Almost 2 weeks in, I've lost almost 10 pounds and I have been living life outside of the confines of my bathroom. And NO MORE meltdowns! Gluten really is arch nemesis as my boyfriend calls it haha! Thanks everyone for the advice, especially IH. You are the BEST!

    I got Annie's rice pasta and cheese Mac and cheese. The only kind of dairy that bothers me is straight milk and too much ice cream( like more than a couple scoops). I haven't had any problems with cheese or yogurt yet. Hopefully I don't cause I love that stuff. I'm actually saving chicken for dinner Tuesday night and I'm having fish and rice for dinner! I need to remember to bring goodie bags of food with me to work and school because i didn't bring enough with me and I'm starting to get to that too hungry point. As I'm typing this I'm eating some gluten-free cereal awaiting dinner :). I sound like such a foodie but I'm really just malnourished and looking for something to fill my belly :)

    I'm hungry just reading your post. Chicken with skin on is my favorite next to steak :D . I bought a box of gluten free mac and cheese the other night and I think I might make that tonight. Dairy has been easier to eat the past few days. I'm not gonna jump in and have a glass of milk just yet. Almond milk is great though. I'm not sure how good that would be in mac and cheese though. Maybe I will just get the Velveta and use that. Last night was the first meal I have had in almost a week that made me completely full. Who knew I wasn't getting enough protein or calcium! I just started taking my probiotics (even though my bf's mother has been telling me to take them for almost 4 years :o ) I'm hoping that will help things along as well.

    After I get out of work today I'm going to get some chicken with skin and eat it all :). I need to make up for lost time because of not eating a lot of protein ;)

  8. Thanks Cathey! Irish Heart is the best. We actually live quite close, so it's nice to have someone near me that I can talk to. I'm hoping soon this will all pass and I know it takes time. I just happen to want the time to go by so I can feel better now :). I'm going to start carrying fruits, veggies and little snacks with me so I don't get too hungry or to the point I did last night. I never want to get back to that low again!

  9. I just started my journey 5 days ago and I feel like House when he's detoxing from vicodin. Nothing is making me feel better. I eat and I'm so tired because I haven't been eating nearly as much junk(bread,pasta,cookies,cake etc). I then take a nap for a little while, wake up and I'm starving and nothing gets rid of it. I've been eating fruit, veggies, rice, meat, salads, soup and anything else that is not processed Gluten Free foods. I did buy some of that stuff but at this point I know I'm better off not eating it because processed foods aren't that good for you and they probably don't taste as good as my favorites :).

    I know its only been 5 days but I had a break down last night, I knew it was coming it was just a matter of when and where. I was shopping in walmart and I was so hungry that I couldn't see straight or think. All of the labels on the packages were blurry and couldn't even figure out what I wanted to eat because I was so hungry. My dad went with me and was like well why don't you eat these crackers, you said you just can't have bread right? UGH. That is another reason why I lost it last night. People just don't get it. I was so happy when I found out I came up positive on the DGP IgA test but now that I actually need to follow through with this lifestyle change I feel like I can't. I feel like it's a little soon for this to hit me but who knows, I guess it can happen at anytime. On top of it all I have bronchitis and I can't hear out of either of my ears so I'm going back and forth between fevers and chills from being sick and not being able to eat my yummy comfort food. I know this will pass but I am at a loss for what to do as I am a 24 year old who works full time and is taking 6 classes (18 credits) in school and trying to get into the Disney College Program. Hopefully some day I'll be okay but right now I'm lost and alone :(

  10. So I have a new symptom... sulphur burps and major stomach cramps that have been waking me up in the middle of the night the past 3 nights. From research it looks like its from your gallbladder, but I don't have one. I also saw it could be from Celiac but I'm not sure since it just started but my other symptoms have been on going for a few years. This now has me stumped because I thought it was the stomach bug but the burps went away as soon as they came on. Anyone else have a problem with this. I'm going to bring this up with my doctor when I see them, hopefully soon!

    I had them check my thyroid and it came back normal but I'm not sure what test they did. I'm just really sick of being tired and them continually checking for mono. I've had it once and know that the tiredness im feeling now is way worse than when I had mono. Always being cold even with 2 blankets on and not being able to sleep isn't helping me when I work full time and go to school for 6 classes. I'm gonna look into those books too!

    Thanks IH for the support too. That office has some wacky rules. I hope Boyar will let me go from his patient list. It's time we go our separate ways.

  12. I really hope Dr Gusten will take on a new patient cause I'm sick of seeing this doctor. I think his time as a doctor is coming to an end as I knew more about the new test than he did. I really hope they don't make me wait long because I can't deal with this much longer. My bathroom habits are moving into my school schedule and unfortunately getting up in class without explaining my story to my 6 teachers is stressing me out. Hopefully by Monday I'll have a new doctor and be happy!

  13. I just called to switch doctors cause I'm sick of getting the run around and they told me they have to put a request in with both doctors. They ask me why and I said I need a second opinion. This is just not acceptable. I'm paying for health insurance and 50$ an appointment, I should be able to see who I want to. I have a feeling I'm gonna get a call with a big fat no as the answer for this. I can't wait :(

  14. I had my gallbladder out in 2011 so that is why they are looking into it being celiac disease. I know I have it because of my symptoms and the test results. My symptoms stopped temporarily after I had my gallbladder taken out but returned shortly after. I just can't wait to call my doctors group later today and go to see dr gusten. We'll see how many times I need to tell them I need to see him or I'm moving elsewhere with this.

  15. So today's appointment was a waste of my time and that is unfortunate :(.

    The first thing he goes into is so, I think you're lactose intolerant. How can you know that from my bloodwork that doesn't even mention a test for lactose intolerance. I have also known that I have been that way for 3 plus years. He then says something which is really stupid I think you should stop drinking milk and try a lactose free diet now, I haven't had milk in 3 years and he knows that from my file. I only eat cheese without lactose, soy and almond milk, and yogurt none of which have lactose.

    Then he goes into my celiac panel and liver bloodwork. so the test you came up positive on is one of the older tests and is really irrelevant in today's day and age. The positive marker that came back shows that you could get it sometime in your life. at this point I'm ready to jump over the desk and smack some sense into him :-X . If it was irrelevant, why would the lab use it and I believed that this test was one of the newest (dgp iga). And then he wants to send me for lactose intolerance testing, which I declined because I know the answer is yes and then he is sending me for the third ultrasound on my right side in less than a year. And then I have to go back to see him once I try the lactose trial and the ultra sound comes back. Then he said we could look at me going gluten free which he pretty much doesn't think I can do cause its sooooo hard according to him.

    At this point I'm just gonna do the gluten free diet once I go back to see him even if he says not to cause I know my body better than him. This whole situation is really working me up but i just have to do what's best for me especially since I found out i'm doing my internship for school in Disney in a year. Can't really work in the parks or really anywhere and have to go to the bathroom 10 times in an 8+ hour shift.

    Thanks for listening everyone and thank you to all that have given me advice. I really appreciate it cause no one understands around here other than my boyfriend :)

  16. Tomorrow is the day I hopefully find out what's going on with me. Hoping to not have to go through an endoscopy and other scopes again. Once was enough :(. I'm so nervous and I can't sleep because my stomach is in knots. I know things could be worse but I just started school again at a local community college and will be graduating and looking for new job opportunities in December. I just want answers so I can work at a job without getting looks cause I go to the bathroom so many times a day. I also hope this doctor won't be a jerk like he was last time I saw him. Oh to have nothing wrong with you is my favorite line... But not even 5 months later I'm down an organ. Yeah, this doc knows his stuff, being the best "gallbladder specialist" in the office. UGH. Sorry to any one reading for all of my negativity but I need to vent before I explode on this stupid doctor tomorrow!

  17. I'm going to the GI soon but I'm not sure if I should continue eating gluten until then. It's only day two and I'm super hungry no matter what I eat. This is probably normal but I'm kinda worried. I'm not sure if I'm having another endoscopy but I hope not cause that won't prove anything especially if I stop eating gluten now. Hopefully they call me today so I can set up my appointment for ASAP.
