So.... I needed to get my children tested, so I went with Entrolab. According to entrolab, both children are gluten sensitive (is that the same thing as gluten intolerant). Yes, the elimination diet IS scientific! I eat gluten, I feel like crap. I do not eat gluten, I feel great. I eat gluten again, I feel like crap... hmmmm... could this mean that I can't eat gluten??? I mean, seriously, give yourself permission to do what your body is telling you to do. I like to have a tangible paper with numbers, but for me... it was not... -

Quinoa is a grain--I make it in a soup a bit like barley soup (except with quinoa, not barley). You can find it at health food stores. You have to wash it really well in a sieve under water to get the film off or it can give you a stomach ache. Some people with celiac can't digest it well, but for me, I eat it just about everyday to stay regular. -

I am not an expert because my son is going through this right now too, but I think you should keep exploring other food allergies. Yes, polenta is another word for fine cornmeal. I think tapioca flour would sub for the polenta if you didn't want to use corn.
