I have a grill. Season some meat and put in the fridge in the morning... later on, slap it on the grill... make a quick mushroom/wine sauce or whatever... add a grilled vegetable... super easy, you don't heat up your kitchen, and there are minimal dishes. We grill a lot of salmon and chicken. Good luck! -

Having a good soup thermos (thermos brand works great) is so key. I pack left overs from supper--the one I bought even has a spoon that is attached to the lid. You can put spaghetti, chicken, soup.... it keeps it hot. My kid LOVES it. -

You have to consider cross contamination--are they washing their pans or boiling a fresh pot of water before making the gluten free food? It would not be a bad idea to have your gallbladder checked out--either for stones or for how it is functioning even if there are no stones. I know a lot of people who were undiagnosed gluten intolerant for years on years have had their gallbladders out--and there is some research that says that food sensitivities can cause gallstones. A lot of vitamins are made with gluten and/or soy. There are some gluten free, soy free brands--you just have to be really careful. I agree about xanthan gum--it is made from corn, so if you have problems with corn, then you should stay away from it. -
